Sweet and Spicy Chicken Bacon Lollipops

Can you feel that warm breeze blowing through your town yet?! It’s almost Memorial Day which (for everybody but me) means the start of GRILLING SEASON! I’ve been spending so much time outside lately. Cooking on my grills, cleaning my grills, taking pictures of my grills, snuggling my grills. Basically just giving them all of the love that they deserve.

I’ve been working on some outstanding recipes using the newest line of seasonings and marinades from McCormick Grill Mates to take you from occasional griller to master of the outdoor cooking domain this summer. I love that McCormick Grill Mates products are available at all of my grocery stores. I didn’t want to include anything in this recipe that would be impossible to find or difficult to recreate. I started grilling all of the time because it was often much easier than cooking up a complicated recipe in the kitchen. The McCormick Grill Mates people seem to be thinking along the same lines because they have developed some amazing spice blends and marinades that are ridiculously flavorful and simple to use. I mean, the entire line is called “Grill Mates.” Basically, we were made for each other. I get to sample a bunch of their products throughout the summer and I’ll be delivering a couple more recipes to keep you at the top of your grilling game all season long.

McCormick Hot Pepper Blackened Seasoning on Chicken Bacon Lollipops

These Sweet and Spicy Chicken Bacon Lollipops are just layer upon layer of flavor. Tender chicken, savory bacon, Hot Pepper Blackened Seasoning, and a simple sweet red pepper jelly to top everything off. The subtle heat from the hot pepper blackened seasoning is perfectly tempered by the mind blowing sweet pepper jelly. My 4 year old boy had THREE servings. He never eats (and is quite particular about spicy foods and hates anything with the word “pepper” in it) so this meal was pretty much a miracle.


Aside from tickling your tastebuds, these lollies look totally stunning. Perfect pinwheels of meaty goodness grilled up and served on a stick. Are you ready to be a grill superstar? Because if you bring these to the next neighborhood cookout instead of the old “hotdogs and frozen burger patty” standby, you’ll leave the party in a cape. These Sweet and Spicy Chicken Bacon Lollipops are layer upon layer of flavor. Tender chicken, savory bacon, Hot Pepper Blackened Seasoning, and a simple sweet red pepper jam to top everything off.

  • 2 medium boneless skinless chicken breasts
  • 9 slices center cut bacon
  • 1 Tablespoon McCormick Grill Mates Hot Pepper Blackened Seasoning
Sweet Pepper Sauce
  • 1 large bell pepper stem and seeds removed
  • 1 1/2 cups white sugar
  • 1/4 cup apple cider vinegar
  • 1 Tablespoon salted butter
  • 1 Tablespoon McCormick Grill Mates Hot Pepper Blackened Seasoning
  1. In a blender, pulse the bell pepper, sugar, vinegar, butter, and Hot Pepper Blackened Seasoning together until the peppers are chopped into small pieces. Transfer to a small sauce pan and bring to a boil. Reduce the heat to low and simmer with the lid off for 15 minutes. While the sauce is simmering, prepare your lollipops.
  2. Preheat your grill to medium high (about 375-400 degrees).
  3. Slice your chicken breasts lengthwise into 1 inch thick strips. Lay a piece of bacon on your cutting board and top with a strip of the chicken. Roll into a pinwheel and slide onto a bamboo skewer. Repeat with the remaining chicken and bacon strips.
  4. Season both sides of the lollipops with the Hot Pepper Blackened Seasoning.
  5. Place the chicken bacon lollipops on the grill and cook for 6-8 minutes per side, or until the internal temperature reads 165 degrees with an instant read thermometer.
  6. Transfer the finished lollipops to a large plate and serve the sweet pepper sauce on the side for dipping (or pouring).
