What is sirloin?
Sirloin is a cut of steak that comes from the rear back portion of the cow, between the short loin and the round. This area gets a moderate amount of exercise, resulting in a steak that’s leaner and less tender than cuts like ribeye or filet mignon, but still flavorful and juicy when cooked properly. By using my method for two-zone grilling, you’ll get perfectly cooked-through steak that’s both tender and juicy.
Choosing the Right Sirloin
When selecting sirloin steaks, look for cuts with rich, red color and even marbling of white fat throughout the meat. This marbling helps keep the steak moist and flavorful during cooking. If you want the best results on your grill, then choose thicker steaks at least 1 to 1 1/2 inches thick.
Simple Steak Seasoning
You want to be sure you’re seasoning your sirloin steaks with the right blend, because this is key to enhancing their natural flavor, and creating a delicious crust on the grill. This simple seasoning blend perfectly complements the beefy taste of sirloin:
- 2 teaspoons black pepper
- 2 teaspoons Kosher salt
- 1 teaspoon ground coriander
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper

- Rest ahead. Take your steaks out of the fridge ahead of time, and then allow them to come to room temperature. This will help them cook more evenly.

- Rest after. Once again, you need to rest your steaks just as you did before grilling. Giving your sirloins 5-10 minutes to rest after grilling will make for easier slicing, and ensure all the juicy beef flavor stays in your meat.
How Long to Grill Sirloin
We’ll be grilling your sirloin steaks in two stages using my Two-Zone Grilling method. First we’ll give our steaks around 40 minutes over indirect heat, and then transfer them to the direct heat side for a final seal. The overall process should take around 45 minutes, but that can vary a lot depending on the cut of meat and your grill. Always uses a reliable meat thermometer, like my Thermapen ONE, to ensure your steaks are cooked to perfection. Here are the target internal temperatures for various levels of doneness:
- Rare: 125 degrees F
- Medium Rare: 135 degrees F
- Medium: 145 degrees F
- Medium Well: 155 degrees F
- Well Done: 160 degrees F
How to Make Sirloin Steak on the Grill
It’s time to fire up your grill and get those savory sirloins on the grill. Here’s how to make perfect sirloin steaks every time, with these simple steps:
- Make seasoning. You want to give your sirloin steaks a few minutes to rest before you season and grill them. Take this time to set your grill up for two-zone grilling, and make your steak seasoning. Combine all your seasoning ingredients in a small bowl, and then whisk them together. Use a fork to avoid any clumping. One your seasoning is blended, season your sirloins on all sides.
- Grill sirloin steaks. When your grill is up to temp, it’s time to get your sirloins on. First, you’ll give your steaks roughly 40 minutes on the indirect heat side of your grill, flipping once in between. This period over indirect heat allows the smoky goodness to render the fat in your sirloins, releasing all that yummy beef flavor.
- Sear your sirloins. When your steaks have about 10 degrees left to your desired doneness, then you’ll want to get them to the direct heat side of the grill. 2-3 minutes per side over direct heat will give your sirloins a nice sear, ensuring a slight crust locking in all the tender juiciness.
- Rest, serve, and enjoy. Remove your steaks to the serving platter and rest for 5-10 minutes. This resting time is crucial for the juicy flavor inside to settle, allowing for perfect slices.

Ingredients
- 4 6-8 ounce sirloin steaks
Simple Steak Seasoning
- 2 teaspoons black pepper fresh cracked
- 2 teaspoons Kosher salt
- 1 teaspoon ground coriander
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper
Instructions
- Make seasoning. Remove steaks from refrigerator to rest on counter while you preheat your grill to 350 degrees F for two-zone grilling. Combine all ingredients for the steak seasoning in a small bowl until well combined, then season sirloins with it on all sides.4 6-8 ounce sirloin steaks, 2 teaspoons black pepper, 2 teaspoons Kosher salt, 1 teaspoon ground coriander, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon cayenne pepper
- Grill sirloin steaks. Place steaks on grill grates over indirect heat, close lid, and cook for approximately 20 minutes, then flip once. Cook another 20 minutes, or until the steaks are 10 degrees away from your target temperature.
- Sear your sirloins. Transfer your steaks to the direct heat side of your grill to sear for a 2-3 minutes per side, or until the steaks have a nice bark and reach your preferred target internal temperature.
- Rest, serve, and enjoy. Remove the steaks to a serving platter and rest for 5-10 minutes before slicing and serving.
