Potato Chip Chicken with Bacon and Cheese

This potato chip chicken is coated in crunchy potato chips and grilled to perfection. If that wasn’t enough, it’s stuffed full with a creamy and cheesy stuffing studded with jalapenos and bacon.

Grilled Potato Chip Chicken

Do yourself a favor and grill up this awesome potato chip chicken for dinner this week. It’s a family favorite and combines crunchy potato chips, tender chicken, and a cheesy filling with jalapenos and bacon for the perfect meal.

It’s also quick to put together and cooks on the grill (or in your oven) for the ultimate weeknight easy meal that everyone in the family will love. My kids love the crunch of this chicken, and I’m feeling pretty confident that yours will too!

Ingredients for Potato Chip Breaded Chicken

Once you’ve added this recipe to your weekly meal schedule, here’s what you’ll need to pick up from the store.

  • 4 boneless skinless chicken breasts
  • 1 8.5-ounce bag of potato chips
  • 3 eggs

I like to make my potato chip crusted chicken with a salt and pepper kettle style chip for a little extra something fancy, but you can use any potato chip you like. I do find that the sturdier, kettle-style chips work a bit better for this recipe, though. They tend to hold up better without going soggy.

Here’s what you’ll need for the stuffing.

  • 8 ounces cream cheese
  • 2/3 cup medium cheddar cheese
  • 1 medium jalapeno
  • 1/2 cup crumbled bacon
  • 1 Tablespoon Sweet Rub

How to Make Potato Chip Chicken

Once you have all your ingredients assembled, you’re ready to make this chicken! Here’s how to make potato chip chicken on the grill or in your oven.

  1. Preheat. Preheat the grill to 375 degrees F for two-zone cooking. You can also cook this chicken in the oven preheated to the same temperature.
  2. Butterfly the chicken breasts. Use a sharp knife to slice the chicken breast almost completely in half. Open the chicken up and press it flat.
  3. Stuff the chicken. Combine all ingredients for the cheesy stuffing in a bowl. Scoop an even amount of filling into each chicken breast, and fold the chicken back up to seal the filling inside.
  4. Crush the potato chips. Crush the chips with a mallet in a gallon-sized zip-top bag or blend with a food processor.
  5. Coat the chicken. Crack an eggs into a shallow dish and beat lightly. Carefully dip the chicken breasts in the egg and then into the chip crumbs, evenly coating all sides.
  6. Grill. Place the potato chip crusted chicken on the grill over indirect heat or in your oven on a foil-lined baking dish. Cook the chicken for around 25 minutes, or until the chicken reaches an internal temperature of 165 degrees F.
  7. Serve. Remove the chicken from the grill or the oven to a serving dish. Allow to cool slightly before serving. That filling will be quite hot!

Tips for Making Potato Chip Chicken

Here are some tips for making this awesome chicken.

  • Cook over indirect heat! You want to use your grill as an oven, essentially, by cooking the chicken over indirect heat. This works by creating two heat zones in a gas or charcoal grill. You can also use a pellet grill and simply set your temperature to 375 degrees F, since pellet grills are already indirect convention ovens.
  • Try a flavored chip. I use the thick, ridged kettle style potato chips because I prefer the texture. You can use simple potato chips, but switching up the flavors (like BBQ or ranch!) can bring a lot of variety to the dish.
  • Skip the filling. If you’ve got really picky eaters at home, you can skip the filling and simply coat your chicken and cook. The cook time will be a bit less, but you’ll still get some tasty chicken that tastes great dipped in BBQ Sauce.

Potato Chip Chicken with Bacon and Cheese

Ingredients
 

  • 4 boneless skinless chicken breasts
  • 1 8.5-ounce bag potato chips I recommend using a kettle-style brand chip
  • 3 eggs lightly beaten

For the Stuffing

  • 8 ounces cream cheese softened
  • cup medium cheddar cheese
  • 1 medium jalapeno seeded and diced
  • ½ cup crumbled bacon
  • 1 Tablespoon Hey Grill Hey Sweet Rub link in recipe notes

Instructions
 

  • Preheat. Preheat your grill to 375 degrees F for 2-zone cooking (one direct heat side of the grill with flames and one indirect heat side of the grill without flames). You can also cook this chicken in the oven preheated to the same temperature.
  • Butterfly the chicken. Use a sharp knife to slice each chicken breast almost all the way in half. Open the slice and press each breast flat.
  • Make the filling. In a small bowl, combine the cream cheese, cheddar cheese, jalapeno, bacon, and Sweet Rub. Spread 1/4 of the mixture onto each of the butterflied chicken breasts. Fold the breasts over and press the cream cheese mixture so it is evenly distributed within the chicken.
  • Crush the potato chips. Dump the bag of potato chips into a food processor or blender and pulse until the chips are broken down into crumbs. Alternatively, use a kitchen mallet to crush the chips while they are in a gallon-sized zip-top bag. Pour the crumbs out onto a large plate.
  • Coat the chicken. Crack the eggs into a pie pan or other shallow dish and beat lightly with a fork. Dip the stuffed chicken breasts into the eggs, then into the chip crumbs, coating each side.
  • Cook. Once all of the chicken breasts are coated with the eggs and potato chips, place them on your grill or onto a baking sheet and into the oven. Cook for about 25 minutes, or until the internal temperature of the chicken reads 165 degrees F.
  • Enjoy. Remove the chicken from the grill and serve immediately.

    I used Barbecue Chips Instead aswell & didn’t use the Jalapenos or Bacon Bits. I baked it for 35 min then tossed in some home made bacon And Seasoned with Salt & Pepper. This recipe was Delicious, E.a.s.y & Cheap.

    I made this last night for dinner and it was absolutely delicious!!! I chose to bake mine instead of grilling it and glad I did. My chicken breast we’re really big so the cook time was a lot longer than the recipe said. I started with recommend time of 30 min and added 10 min at a time checking with a meat thermometer it took almost an hour to be completely done (165°) very easy to make omit jalapeno if you prefer I did on my sons piece. The chicken was moist and flavorful and just a small amout of stuffing oozed out I did use a few tooth picks to keep together. This one gets 5 ⭐ in my book!

    Making this tonight! Didn’t have jalapeno’s or bacon in the house but I did mince up scallions and put Cheddar Jack cheese, salt, pepper cajun seasoning, ground mustard, brown sugar & garlic powder in the cream cheese and I also used BBQ kettle one chips! The mixture alone tasted delicious!!! I will let you know the outcome! I’m very excited to try this out, I hope it comes out amazing! Hey lol I put my traditional Sunday dinner aside for this dish!!
