This grilled zucchini and squash is a super simple and incredibly tasty way to use up those fresh summer vegetables. With only 6 simple ingredients, this side dish is easy to make and ready in under 30 minutes.

Grilled Zucchini and Squash

Zucchini and squash is a simple side dish that works with just about any main course. It’s a staple at our house, and we often serve it with beef, pork, and chicken.

The caramelized char from the grill combines with the sweet squash and zesty seasoning to create true vegetable perfection. Finish with a squeeze of fresh lemon juice to really bring the dish together.

Ingredients for Grilled Zucchini and Squash

This side dish will be one of your go-tos all year long. The ingredient list is short and simple, ensuring your veggies taste fresh and delicious. Here’s what you need to make this grilled zucchini and squash.

Fish & Veggie Rub can be purchased from the Hey Grill Hey Store. If you don’t have any on hand when making this recipe, you can make a rub from scratch using my recipe for Homemade Vegetable Seasoning.

How to Grill Zucchini and Squash

Veggies are very easy to cook on the grill, and I believe they taste much better cooked over an open flame than in the oven. If you’ve never had grilled vegetables before, this recipe is a good place to start. Here’s how to grill zucchini and squash.

  1. Preheat. Fire up the grill and preheat it to 450 degrees F. These squash can be cooked on anything you have in the backyard. Gas will be the easiest, but a charcoal grill works well too.
  2. Season. Slice your zucchini and squash into rounds and place them in a grill basket with the sliced onions (I like using a grill wok with lots of surface area). Drizzle them with melted butter and stir to make sure they are evenly coated. Next, season the zucchini and squash liberally with the Fish & Veggie Rub.
  3. Grill. Once your grill is preheated and running at a steady temperature, place the basket on the grill grates, close the lid, and grill for 10-15 minutes. Stir the veggies every 3-4 minutes while cooking to ensure they cook evenly. Remove them from the grill when they are fork tender or cooked to your preferred doneness.
  4. Serve. Remove the veggies from the grill. I like to squeeze fresh lemon on them before serving, but this is optional. These zucchini and squash are ready to be enjoyed immediately!

Tips for Grilling Zucchini and Squash

It’s pretty hard to mess up this recipe, but to help you make the best squash possible, here are a few tips for grilling zucchini and squash.

  • Keep the pieces small. This recipe uses rounds from squash and zucchini that are about 1-2 inches thick. If your vegetables are thicker than this, cut in half or quarters lengthwise before slicing.
  • Use a grill basket. Snag a grill basket for the easiest possible way to grill these veggies. You get extra access to the char from the grill, without losing any precious pieces through the grates.

Ingredients
 

  • 2 yellow summer squash cut into rounds
  • 2 zucchini cut into rounds
  • ½ cup sweet onion sliced
  • 4 Tablespoons butter melted
  • 2 Tablespoons Hey Grill Hey Fish & Veggie Rub homemade veggie seasoning recipe in notes
  • 1 teaspoon lemon juice optional

Instructions
 

  • Preheat. Preheat your grill for high temperature, direct heat grilling (around 450 degrees F).
  • Season. Place the sliced squash, zucchini, and onions in a grill basket and toss to combine. Drizzle the melted butter on the vegetables, stirring gently to coat, and season liberally with Fish and Veggie Rub.
  • Grill. Place the basket directly on the grill grates and close the lid. Grill the seasoned veggies, stirring gently every 3-4 minutes until they are slightly charred and fork tender.
  • Serve. Remove the basket from the grill and serve the vegetables immediately, with a squeeze of fresh lemon juice, if desired.
