This grilled sausage and peppers recipe is a fantastic dinner for any day of the week. Beer-braised peppers and onions combined with char-grilled sausage are a match made in BBQ heaven.

Grilled Sausage and Peppers

Grilled sausage and peppers is a food cart staple, but never has this humble dish been done up like this. Cast iron grilled and beer-braised peppers and onions sit atop a crunchy sausage and a toasty bun for a party of flavors and textures you won’t be able to stop munching.

Even better than the amazing flavors in this grilled sausage, peppers, and onions dish is the fact that this meal is ready in well under 45 minutes. It’s a great recipe to have on hand for busy weeknights or those days when you can’t figure out what to make for dinner.

Ingredients for Grilled Sausage and Peppers

Here’s what you’ll need to assemble before you make this recipe. You can also scroll to the bottom of this post for a full printable recipe card with ingredients and full instructions.

  • 6 Italian sausages
  • 6 submarine rolls
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 1 large yellow onion
  • 4 Tablespoons butter
  • 1 cup beer (or beef stock)
  • 1 Tablespoon Hey Grill Hey Beef Rub

A quick note on these ingredients: That awesome Hey Grill Hey Beef Rub? You can purchase it delivered straight to your door from the Hey Grill Hey Store! If you don’t have any of this rub in your pantry (but honestly, you should; this rub is incredible!), you can season the veggies with equal parts salt and pepper to taste.

How to Cook Sausage and Peppers on the Grill

Ready to make yourself a tasty lunch or dinner? Me too! Here’s how to cook sausage and peppers on the grill.

  1. Preheat. Fire up the grill and preheat to 450 degrees F. Add a 12-inch cast iron skillet to the grill and allow the skillet to preheat as well.
  2. Cook the peppers and onions. Slice the peppers and onions. Add butter, peppers, and onions to the skillet. Season the veggies with 1 Tablespoon of Hey Grill Hey Beef Rub (or equal parts salt and pepper). Cook until the onions have started to brown, then add in the beef (or beef stock).
  3. Add the sausage. Add the sausage to the skillet of peppers and cook for 10 minutes.
  4. Grill. Remove the sausages from the skillet and place them directly on the grill grates and grill for 2-3 minutes. Flip the sausages and grill for another 2-3 minutes to crisp the exterior. Add your buns to the grill during this time as well for a few minutes to toast them up (if desired).
  5. Enjoy. Remove everything from the grill and dish up with sausage, peppers, and onions layered on top of the toasted bun. Add any other condiments as desired and dig in.

Tips for Grilling Sausage and Peppers

Now that you’re armed with the how-to of grilling sausage and peppers, let’s break a few things down so you end up with the perfect meal every time.

  • Get that prep work done. This recipe moves pretty quickly on the grill, so make sure you’ve got all of your ingredients prepped and ready to rock and roll. Once you’re in front of the grill, you don’t want to be running back inside for something you forgot and overcook your food.
  • Follow the instructions. The steps of cooking the peppers and onions, deglazing the pan, braising the sausages, then grilling them over high heat make the most flavorful veggies and the best-textured sausages ever. It’s not hard, just a few more steps than simply grilling the sausages, but it is totally worth it.
  • Buy good rolls. This is not a classic white hot dog bun type of sandwich. Grab the good submarine rolls from the bakery that are nice and soft in the middle. Make sure they get really toasty on the grill. A little char isn’t a bad thing. The texture of these buns will make or break a simple sandwich like this!

Ingredients
 

  • 6 Italian sausages
  • 6 submarine rolls

Peppers and Onions

  • 1 red bell pepper stem and seeds removed
  • 1 yellow bell pepper stem and seeds removed
  • 1 orange bell pepper stem and seeds removed
  • 1 large yellow onion
  • 4 Tablespoons butter
  • 1 cup beer or beef stock
  • 1 Tablespoon Hey Grill Hey Beef Rub or equal parts salt and pepper

Instructions
 

  • Preheat. Turn on the grill and allow it to preheat to 450 degrees F. Next, place a 12-inch cast iron skillet on the grill grates and close the lid, allowing the cast iron to preheat for 5 minutes.
  • Cook the peppers and onions. Slice the peppers and onions into thin strips. Add the butter to the preheated cast iron, followed by the peppers and onions. Season with the Beef Rub. Cook for 5-7 minutes, stirring frequently. Once the onions have started to brown, pour in the beer or beef stock, scraping the bottom of the pan to deglaze.
  • Cook the sausages. Nestle your sausages into the hot pan of peppers and onions. Close the lid and cook the sausage for 10 minutes.
  • Grill the sausages. Move the sausage from the pan directly to the grill grates and remove the skillet of peppers and onions from the grill. Sear the sausages for 2-3 minutes per side to finish cooking and crisp the casings. Remove the sausages and set aside.
  • Toast the buns. Add your buns, cut side down, to the grill grates, and toast for 1-2 minutes.
  • Enjoy. Serve the crispy sausages on the toasty buns and top with the peppers and onions from the skillet.
