Flavor Profile: What’s Inside

Making the perfect chicken wings is super easy with the ingredients of your Wing Night Kit. All three components are essential for crispy, smoky wings smothered in sticky sweet glaze. Let me tell you a little more about what they all do:

  • Sweet Rub. With a brown sugar base and a savory mix of paprika and other seasonings, my Sweet Rub is the ultimate base for your wings. Put it on chicken, ribs, beef, veggies, you can even put it on popcorn. Seriously, try it.
  • Wing Batter. A blend of cornstarch, baking powder, and some light spices makes up this Wing Night Kit exclusive. Use it to create a light, crispy, totally delicious batter for your fried wings. It’s also delightful on fish, other cuts of chicken, and more.
  • Sweet Heat. A mix of aged cayenne pepper, cane sugar, and a spice blend makes this sticky Sweet Heat glaze perfect for tossing your wings. It’s also great for anything you normally glaze, drizzled on burgers and sandwiches, and more.

How to Use Your Kit for Perfect Wings

Making the ultimate wings is super simple with your Wing Night Kit. I include an instruction card in your kit with a foolproof method for helping you make the ultimate chicken wings. Now, if you want to learn more about this method, here’s how it works:

  1. Preheat the smoker. Preheat your smoker to 225 degrees F. Allow the smoker to come to temperature while you prep and season the chicken wings.
  2. Preheat the oil. When the wings are almost done, add the cooking oil to a 6-8 quart pot, ensuring the oil doesn’t fill more than 2/3rds of the pot. Preheat the oil to 350 degrees F.
  3. Season the wings. Season the chicken wings on all sides with Sweet Rub. (Be sure to use both flats and drumettes when making these wings.)
  4. Smoke. Place the seasoned chicken wings on the grill grates of the smoker. Close the lid, and smoke for 45 minutes to an hour (depending on the size of your wings), or until they reach an internal temperature of 165 degrees F.
  5. Batter the wings. Mix ¾ cup ice cold water with 1 cup of the Wing Batter mix. Stir with a fork until just combined. The batter should be fairly thin. Transfer the wings to the batter in small batches of 8-10 wings. Toss the wings to coat.
  6. Fry the wings. Carefully place each battered wing in the preheated oil. Fry for 4-5 minutes until the wings are golden brown and crispy. Remove the fried wings to a draining rack and let them rest while you fry the remaining wings.
  7. Add glaze. Once the wings are fried, toss them in the Sweet Heat BBQ Glaze. Get a little messy, then clean up with the included Hey Grill Hey Wing Wipes included in your kit.
