These grilled steak fajitas are cooked to perfection and served hot and sizzling in a cast iron skillet for a show-stopping dinner. They’re an affordable dinner that every member of the family will enjoy.
Grilled Steak Fajitas
Do you love going out to eat and having a sizzling skillet full of all the fixings for steak fajitas delivered straight to your table? Did you know you can get the same delicious meal right in your own kitchen? This recipe for grilled steak fajitas results in a gorgeous meal that feels like it was specially ordered.
That classic restaurant-style steak fajita flavor comes from the right cut of meat, a super hot grill, and the perfect seasoning blend. There is no marinating required for this recipe so you can go from the fridge to the dinner table (on a sizzling skillet, no less) in under 30 minutes!
Ingredients for Grilled Steak Fajitas

- 3 pounds flap, skirt, or flank steak
- 3 Tablespoons Hey Grill Hey Fiesta Rub
- 1 yellow onion
- 2 red, yellow, or orange bell peppers
- 2 Tablespoons avocado oil
- 12 corn or flour tortillas
- assorted toppings (I like sour cream, cheese, guacamole, Smoked Salsa, cilantro, and fresh lime)

How to Grill Steak Fajitas
Now that you have everything you’ll need to make this tasty dinner, let’s dive into the recipe. Here’s how to grill steak fajitas.
- Preheat. Fire up the grill and preheat to High heat (450 degrees F). While the grill preheats, place a grill basket on the grill to preheat as well.
- Season. Coat the onions and peppers in avocado oil and then season with 1 Tablespoon of Fiesta Rub. Next, season the steak with the remaining Fiesta Rub.
- Grill. Place the onions and peppers into the preheated grill basket. Lay the seasoned steak directly on the grill grates. Leave the lid open on the grill and cook until the steak reaches your preferred doneness (125 degrees F for Rare, 135 degrees F for Medium Rare, or 145 degrees for Medium). Remove the peppers and onions when they are slightly charred and softened. Allow the steak to rest for 5 minutes.
- Grill the tortillas. Place a 12-inch cast iron skillet on the grill. Place a tortilla in the skillet and cook until just warmed through. Repeat until you have heated all the tortillas. Wrap the tortillas in foil to keep them warm.
- Serve. Slice the steak very thinly. Place the steak and vegetables in the skillet and serve with your favorite toppings.
Tips for Grilling Steak Fajitas
Here are some tips for making grilling steak fajitas. These guys are fairly easy to make, but I’m throwing in some BBQ knowledge to help you get the best results.
- Grab the right cut of steak. The best cuts for fajitas are thin, well-marbled, quick-cooking steaks with lots of surface area to pick up that signature fajita char. Flap steak, skirt steak, or flank steak are my top choices. They are naturally tougher cuts, but sliced thin against the grain, they will melt in your mouth!
- Get sweeter bell peppers. Most restaurants use green bell peppers (they are the cheapest), but I prefer the sweeter red, orange, and yellow peppers. They caramelize so beautifully when cooked over high heat.
- Have the right tools. A good metal grill basket makes grilling the vegetables super easy and adds all of that tasty charred flavor from the high heat.
- Heat up a skillet! While your grill is already hot and your meat is resting, throw a seasoned cast iron skillet on your grill. Right before serving, add your vegetables and sliced steak to the hot skillet. You’ll have a restaurant-style presentation right at home!

Grilled Steak Fajitas
Ingredients
- 12 corn or flour tortillas
- 3 pounds flap, skirt, or flank steak
- 3 Tablespoons Hey Grill Hey Fiesta Rub recipe in notes section
- 1 medium yellow onion
- 2 bell peppers red, orange, or yellow
- 2 Tablespoons avocado oil
Assorted Fajita Toppings
- sour cream
- cheese
- guacamole
- salsa
- cilantro
- lime
Instructions
- Preheat. Preheat your grill to High heat (around 450 degrees F) and place a metal grill basket over the heat to begin preheating.
- Season the onions and peppers. Toss your onions and peppers in avocado oil to thoroughly coat. Season with 1 Tablespoon of the Fiesta Rub.
- Season the steak. Season both sides of the beef steak with the remaining Fiesta Rub.
- Prep the toppings. Assemble all of your fajita toppings so you are ready to eat just as the food finishes cooking.
- Grill. Add the seasoned onions and peppers to the hot grill basket on the grill and the steak directly on the grill grates. Cook with the lid open, stirring the peppers and flipping the steak every 3-5 minutes. Grill until the steak reaches your desired internal temperature (125 degrees F for rare, 135 for medium rare, 145 for medium) and the peppers and onions until they are slightly charred and just softened.
- Grill the tortillas. Remove the steak and vegetables from the grill. While the steak rests, place a cast iron skillet on the hot grill and grill your tortillas to heat through. Wrap the hot tortillas in foil to keep them warm.
- Serve. Thinly slice steak against the grain. Arrange the steak and the vegetables in the hot cast iron skillet and serve to your family for a restaurant-style sizzling finish. Serve with warmed tortillas and all of your favorite fajita toppings.
