Bacon Wrapped Carrots

There is truly nothing in the world that isn’t better with a little bacon wrap. Now, I’ve wrapped a lot of things in bacon (scroll below to see just a few links to these bacon wrapped recipes). I guess you could say I’m a bit of a bacon connoisseur. This hopefully gives me a little credibility when I tell you that you HAVE to try these carrots. They are the best of the best and have an incredible flavor.

These maple glazed carrots are easy to make yet extremely delicious. You simply wrap a carrot in bacon, drizzle it with maple syrup, salt, and pepper, and cook it on the grill. Simple, and oh-so flavorful!

Grilled Bacon Wrapped Carrots

These bad boys are cooked on the grill, helping the carrot to cook to just the right doneness. I like to cook these on my pellet smoker, but you can cook them on a gas grill, or even in your oven. The bacon on the outside gets caramelized right at the end with a sticky sweet maple glaze, and the carrots on the inside are absolutely the pinnacle of tender perfection.

Aside from tasting amazing, these bacon wrapped carrots are beyond simple with only 3 real ingredients. I like to wrap all of the carrots in bacon either the night before or earlier in the day then cover and refrigerate for an additional time saver.

If I’m adding these carrots to a holiday dinner (these guys are incredible with Thanksgiving), I find them easily cooked right before dinner is served. After I finish cooking my big turkey and pull it off the grill to rest for 30 minutes, I turn up the temperature a bit on my smoker or oven and get these carrots cooking. They will be ready to plate up and serve right as the turkey is ready to carve.

Ingredients for Maple Glazed Carrots

Not only do these carrots taste amazing, they only require you to pull 5 things out of your fridge and pantry. I like to consider them the perfect side when you don’t have a lot of food in your fridge.

Here are the 5 ingredients you’ll need for these bacon wrapped carrots (exact amounts are available in the recipe card below).

  • 3 pounds whole carrots
  • 1 1/2 pounds of bacon
  • 1/2 cup maple syrup
  • salt and pepper

Tips for Making Bacon Wrapped Maple Glazed Carrots

Before you stick these guys on the grill, here are a few tips to keep in mind when making them to ensure they come off the grill cooked to perfection.

  1. Wrap tightly. Don’t just slap the bacon on the carrots. Take time to neatly wrap them and tuck them in on the ends to make sure the bacon won’t come off mid-cook.
  2. Use 100% pure maple syrup. I highly recommend using 100% pure maple syrup for these carrots. It will make all the difference in the way they cook and taste. And while the real stuff does tend to cost a bit more, a little goes a long way.
  3. Watch out for grease fires! This goes hand-in-hand with wrapping your bacon tightly. If you have any bacon hanging down or lots of pieces falling off, you’re setting yourself up for some sad carrots. Keep an eye on them and check them periodically to ensure all is well on your grill.

Ingredients

  • 3 pounds whole carrots
  • 1 ½ pounds bacon
  • ½ cup maple syrup
  • salt and pepper to taste

Instructions

  • Preheat. Preheat your indirect grill or smoker to 400 degrees F. These carrots can also be cooked in an oven, if desired.
  • Wrap and season. Thoroughly scrub and peel each carrot. Wrap each carrot in a piece of bacon, overlapping the ends so they are secured. Sprinkle each carrot with salt and pepper.
  • Grill. Place the wrapped carrots on the grill grates (or on a baking sheet, if using the oven). Close the lid and cook for 25-30 minutes or until the bacon is golden and crisp.
  • Brush with syrup. During the last 5 minutes of grilling, brush the carrots with the maple syrup. Grill until the syrup starts to bubble, remove from the grill, and serve.
  • Enjoy. Remove the carrots from the grill and serve immediately. These are best when still warm.

If I wanted to have a very soft carrot, is there a way I can do this? Possibly steaming the carrots before hand?

    1. Hey Grill Hey says:

That would work! Or you could blanch them in boiking water for 3-5 minutes.

Keep the maple. I used cane syrup

  3. Barba says:

This was delish. I put in oven 25 mins in oven on a rack over tray but bacon didn’t brown on bottom so then I flipped them over and put in another 20 mins. That worked fine. Was delicious. Carrots were a little firm but it didn’t effect my enjoyment of dish at all.

  4. Peggy says:

Can these be done a day before and reheated the next day? I didn’t know if they would be the same. Wanting to do it for Christmas side.

    1. Hey Grill Hey says:

I haven’t tried making them ahead, but I think they will be fine if you do it that way!!

I so enjoyed this recipe. I’m not a carrot fan at all. But these were really good. I, however, did cheat. I used maple flavored bacon and it worked well. Making them now again for Pastor Appreciation luncheon today.

Thanks so much Cindi!! I’m so happy you like them!!

  7. Faith says:

I follow the recipe and instructions carefully. I cooked them in the oven at 400 for 40 minutes. The carrots were still on the hard side and the bacon did not seem to want to brown. My husband enjoyed them. Me, not so much. Any suggestions??

    1. Hey Grill Hey says:

I’m curious if you placed them directly on the baking sheet or placed them on a rack above it?

      1. Faith says:

I placed them on a cake rack and put that on a
Baking pan. I cooked them in the middle
        Rack of the oven.
