This Taco Soup made with ground beef, beans, corn, peppers, and the bold spices of my Fiesta Rub makes an easy and delicious family dinner that’s full of hearty, Southwest comfort. It’s a simple, one-pot meal, but it’s so good you’ll feel like a weeknight hero.
Taco Soup
I love Taco Tuesday as much as anyone, but sometimes I could do without the mess. That’s where this Taco Soup comes in clutch. It’s got everything you find in your favorite tacos, but in one convenient bowl. This soup is loaded with seasoned ground beef, bell peppers, jalapeño, onion, black beans, tomatoes, and sweet corn, then seasoned with my Fiesta Rub and finished with lime juice and fresh cilantro. Oh, and a savory broth you can slurp up afterward. Try doing that with a taco.

Ingredients for this Recipe
I usually try to keep things simple when it comes to ingredients. While this soup is absolutely loaded with taco flavor, it’s made with simple produce and common items you’ve likely got on hand already. Here’s everything you’ll need so you can get started:
- 1 pound ground beef (85/15)
- 2 Tablespoons avocado oil
- 1 medium yellow onion (diced)
- 1 red bell pepper (seeded and diced)
- 1 jalapeño (seeded and diced)
- 4 cloves garlic (minced)
- 4 cups chicken stock (or broth)
- 2 15-ounce cans black beans (drained and rinsed)
- 2 14 ½-ounce cans diced tomatoes (with liquid)
- 1 ½ cups sweet corn (frozen)
- 2 Tablespoons Hey Grill Hey Fiesta Rub (divided use)
- 1 Tablespoon fresh lime juice
- ⅓ cup fresh cilantro leaves (finely minced)
If you don’t have any Fiesta Rub on hand, you can pick some up in the Hey Grill Hey Store, or make your own following this easy recipe. You can also just use taco seasoning if that’s what you’ve got on hand.
The Best Toppings for Taco Soup
This stuff is already packed with awesome flavor, but soup or not, a taco isn’t a taco until you add the toppings. When I want to add some crunch, creaminess, and even bright notes, these are my go-to toppings:
- avocado (diced)
- medium cheddar cheese (shredded)
- sour cream
- lime (cut into wedges)
- fresh cilantro leaves
- tortilla chips (or strips)
These are some of my family’s favorite toppings, but don’t be afraid to get creative. I’ve got an awesome recipe for pickled jalapeños if you like a little extra spice, or you can add any topping you love. After all, the best part about making your own recipe is that you can customize it to make something all your own!
How to Make Taco Soup
Alright, now that you’re good and hungry, let’s cover how to actually make your Taco Soup. Just follow these foolproof steps and you and your family will be in soup heaven in under an hour:
- Brown the ground beef. Preheat a large pot over medium heat and drizzle in the avocado oil. Add the ground beef, then season with 1 Tablespoon of the Fiesta Rub (save the rest for later). Use a wooden spoon to break up any large chunks of ground beef as it browns. You’re looking for the same crumbly, browned beef you’d make for regular tacos.
- Add the aromatics. Next, add in your diced onion, bell pepper, and jalapeño, then cook for 4-5 minutes. Once the onions are translucent and the peppers soften, go ahead and add the minced garlic. Cook for 1-2 minutes, or until you can smell the garlic.
- Add the liquid and canned ingredients. Carefully pour in the chicken stock, canned tomatoes, black beans, and sweet corn, then bring everything to a boil. Make sure to stir everything together and break up any brown bits from the bottom of your pot.
- Add the seasonings. Once your mixture starts to boil, add in the lime juice, the rest of the Fiesta Rub, and minced cilantro. Salt to taste, then gently stir everything together, and reduce the heat to low. While the soup is simmering, go ahead and prepare all the yummy toppings.
- Add toppings, serve, and enjoy. When you’re ready to serve, ladle the soup into bowls. Let everyone add their favorite combination of creamy, crunchy, cheesy toppings, and enjoy!
Storing Leftover Taco Soup
The good news is this soup stores easily and tastes even better the longer the flavors marry. The bad news is if your family is anything like mine, there won’t be any leftovers. If you do have any soup left, allow it to cool to room temperature before placing it in a gallon-size zip-top bag or airtight container. When stored in the refrigerator, you can enjoy your soup for 3-4 more days. Just make sure to add your toppings after reheating.
Can I Freeze Taco Soup?
You can absolutely freeze this soup. Once again, allow the soup to cool to room temperature, then place in zip-top freezer bags or freezer-safe containers. Make sure to leave a little space, because the liquid will expand as it freezes. You can store the soup in your freezer for up to 3 months. Then, all you have to do is thaw, heat, and top when Taco Tuesday rolls around.

Instructions
