I kept this guacamole recipe simple with just a handful of fresh ingredients you likely have on hand. Each ingredient shines to create a rich depth of flavor and some incredible textures. Here’s what you need:
- 4 avocados
- ¼ white onion (diced)
- 1 tomato (diced)
- ½ cup cilantro (chopped)
- 1-2 Tablespoons lime juice
- 2 teaspoons Hey Grill Hey Fiesta Rub

How to Select Avocados
Knowing the right avocados to choose can be tough, but I’m here to help with a few indicators to look for at the store. First, pick the avocados up and give them a little squeeze. They should have a little give when you squeeze, but not be mushy. You want to find dark green, almost black avocados that are slightly bumpy, without spots. If you’re planning on buying them ahead of time, then I recommend getting avocados that haven’t yet ripened. You can let them ripen until you’re ready to make some yummy guac.
How to Make Restaurant Style Guacamole at Home
Now that you’ve got your ingredients ready, just follow these simple steps to make this restaurant-worthy guacamole. The key is to treat each ingredient with care to maintain their individual flavors and textures.
- Make the pico. Dice up your tomato and onion, and chop your cilantro. Remember, this is your guacamole, so you can make it how you like. I love a chunky salsa, but you can cut everything smaller if you prefer smooth. When you’re done, combine everything in a medium-size bowl.
- Prepare avocados. First, cut your avocados in half and remove the seed. Slice the halves into cubes, then pop or scoop them out into a large bowl. Sprinkle it with a Halve and cube the avocados, then remove the flesh into a large bowl. Sprinkle it all with a healthy shake of my Fiesta Rub, then mash to your desired consistency.
- Combine and mix. Add in the pico, then gently stir it into the mashed avocado with a spoon. You want it mixed enough so every bite has a little bit of everything, but not so much you lose the individual flavors.
- Serve and enjoy. Your guacamole will be ready to be devoured right away, so make sure to have some tortilla chips on hand.

The best part about making your own guacamole at home is you can customize it just the way your family loves it. You can make it as chunky or smooth as you prefer. Adjust ingredient amounts to your liking, or add something totally different. Try asking for that at a restaurant. - Heat it up. Add some diced jalapeños or Serrano peppers for a little spice. You can leave the seeds in, if you want to go even hotter.
- Switch up the herbs. Cilantro is a staple of most guac, but I get that it’s not for everyone. You can try swapping it for fresh basil or parsley.

How long does guacamole last?

If you notice any browning on the surface, you can simply scrape it off. The guacamole underneath should still be good. To refresh day-old guacamole, give it a a squeeze of fresh lime juice and a quick stir to brighten the flavors.

- ¼ white onion diced
- 1 tomato diced
- ½ cup cilantro chopped
- 1-2 Tablespoons lime juice
