Pico de Gallo
- ¼ white onion diced
- 1 tomatoes diced
- ½ cup fresh cilantro leaves chopped
- 1-2 Tablespoons fresh lime juice
Make the pico. In a medium-size bowl, combine your diced tomato, onion, and cilantro, then drizzle your fresh lime juice. Stir gently with a spoon until everything is incorporated.

Prepare avocados. Cut your avocados in half, remove the seeds, and cut them into cubes. Next, remove the cubes from the skin into a large bowl, sprinkle with the Fiesta Rub, then mash to your desired level of chunkiness.
4 avocado, 2 teaspoons Hey Grill Hey Fiesta Rub
Combine and mix. Add your pico into your bowl of mashed avocado, then gently stir everything with a spoon until you have all your ingredients evenly distributed.
Serve and enjoy. Enjoy this guacamole immediately with some tortilla chips, or as topping for your favorite BBQ tacos.
