Grilled Buffalo Chicken

Grilled Buffalo Chicken is an easy and fast weeknight recipe. It’s quick and kid-friendly, making it a recipe that you’ll come back to over and over again.
Grilled Buffalo Chicken
Grilled Buffalo chicken thighs give you all the juiciness and flavor of Buffalo wings in a boneless/skinless bite. Thighs are so full of flavor and cook perfectly on the grill. The rich meat creates the perfect balance with the spicy and tangy Buffalo sauce.
This recipe calls for chicken thighs, but you can also use chicken breasts if you like. I prefer chicken thighs because they have more fat and therefore more flavor, but if you’re looking for a lower-calorie option, chicken breasts are the way to go.
Ingredients for Grilled Buffalo Chicken
These grilled buffalo chicken thighs are super easy to make and only require a few ingredients. Here’s what you’ll need for the chicken.
- 2 cups boneless, skinless chicken thighs or breasts
- 2 Tablespoons Hey Grill Hey Beef Rub
For the Buffalo Sauce you’ll need the following:
- 1 cup Buffalo Sauce (my favorite is Frank’s RedHot)
- 1/4 cup salted butter
- 1 Tablespoon brown sugar
If you don’t have any Hey Grill Hey Beef Rub, you can season the chicken thighs with equal parts salt, pepper, and garlic powder.
How to Make Buffalo Grilled Chicken
Once you have your ingredients compiled, you’re ready to make this chicken.
- Season. Season the chicken on all sides with Hey Grill Hey Beef Rub. This seasoning is available in the Hey Grill Hey Store.
- Grill. Place the chicken on a grill (I like a classic charcoal grill for this chicken) preheated to 425-450 degrees F. Grill the chicken for 5-7 minutes per side or until the chicken reaches 155 degrees F.
- Make the sauce. While the chicken is cooking on the grill, follow the instructions in the recipe card below to make the Buffalo sauce.
- Baste. Baste the chicken on all sides with the Buffalo sauce while flipping it on the grill. Continue to baste and cook until the chicken thighs reach an internal temperature of 175 degrees F (if cooking breasts, cook until they reach 165 degrees F).
- Serve. Remove the chicken from the grill and rest for around 5-10 minutes before serving.
How Long to Grill Buffalo Chicken
These buffalo chicken thighs take 15-20 minutes to grill buffalo chicken.
This time will vary depending on whether you’re cooking breasts or thighs, the thickness of the meat, and the consistency of the temperature on your grill. The best way to determine if your chicken is done is to check the temperature using an instant-read meat thermometer. If cooking breasts, the grilled Buffalo chicken is done when it reaches 165 degrees F. Remove thighs from the grill when they reach 175 degrees F.

Ingredients

Buffalo Sauce
- 1 cup Buffalo sauce I prefer Frank's RedHot
- ¼ cup salted butter
- 1 Tablespoon brown sugar
Instructions
- Preheat. Preheat your grill to 425-450 degrees F.
- Season. Season the chicken thighs on all sides with Hey Grill Hey Beef Rub.
- Grill. Place the seasoned chicken on the grill and cook for 5-7 minutes per side. Continue to cook until you reach an internal temperature of about 155 degrees F.
- Make the sauce. While the chicken grills, prepare the Buffalo sauce. Set a medium saucepan on your grill grates alongside the chicken. Pour in the Buffalo sauce, butter, and brown sugar. Melt the butter and heat the sauce, but don’t bring it all the way to a boil, as this will cause the butter to separate.
- Baste. Once the chicken reaches an internal temperature of 155 degrees F, begin basting on both sides with the Buffalo sauce while flipping on the grill. Cook and baste until the chicken thighs reach 175 degrees F. If cooking breasts, only cook to 165 degrees F.
- Serve. Remove from the grill and allow to rest for 5-10 minutes before serving.
