These bacon wrapped stuffed jalapenos are perfect for potlucks, parties, appetizers, or anytime you want something totally delicious. Take a fresh jalapeno, stuff it full of a savory cream cheese filling, wrap it in bacon, and cook it on the grill. It doesn’t get much better than these stuffed jalapenos.

Stuffed Jalapeno Peppers

Perfect for potlucks, parties, and especially as game-day food, these stuffed jalapenos are great finger food for all occasions. The creamy filling beautifully tempers the spice of the jalapeno, and the bacon makes the whole thing ridiculously delicious.

In fact, any time we’re headed to watch a game with friends, we almost always make these stuffed jalapeno peppers because we know they’ll be a crowd-pleaser. They’re also fairly easy to make, so I can stuff and wrap them and have them on the grill in no time.

Around these parts, these stuffed jalapenos have been officially dubbed “The Bomb Bombs.” They earned the name because every time I bring these to a party all I hear is, “These are the bomb!” These little flavor bombs really are the bomb. You’d be missing out if you didn’t make these ASAP!

Cream Cheese Stuffed Jalapenos

These stuffed jalapenos are a cut above the rest due to the cream cheese and bratwurst filling. Fresh bratwurst is the real secret ingredient to these stuffed jalapenos. Instead of reaching for sausage, grab your favorite bratwurst instead!

Here’s everything you’ll need to make this stuffed jalapeno filling:

  • 2 links uncooked bratwurst (skin removed)
  • 4 ounces cream cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 Tablespoon Sweet Rub

The sweet rub adds a sweet and savory bite to these jalapenos that can’t be beaten. You can make your own using my recipe for Best Sweet Rub, or purchase a bottle from the Hey Grill Hey Store.

How to Make Stuffed Jalapenos

Every step of this process is quick and straightforward, making these stuffed jalapenos a foolproof recipe for all grilling abilities.

  1. Make the filling. This filling only requires 4 ingredients and about 7 minutes to make. It truly couldn’t be easier. Break up a bratwurst in a 12-inch cast iron skillet over medium-high heat. Cook the brats for 5 minutes. Next, add shredded sharp cheddar cheese, cream cheese, and Sweet Rub to the meat and stir until well combined.
  2. Prep the jalapenos. Begin by slicing the jalapenos in half, de-seeding them, and scraping out the ribs to remove the intense lip-burning heat. We want these spicy, but not overwhelming.
  3. Stuff! Stuff these jalapenos full with the cream cheese bratwurst filling.
  4. Wrap in bacon. Wrap the stuffed jalapenos in one slice of bacon. You can use a toothpick to secure the bacon as needed (though make sure to remove them before you serve them so your guests don’t bite into a toothpick!
  5. Grill. With your gas grill or charcoal grill preheated to medium-high heat (350 degrees F), place the stuffed jalapenos on the grill (if you are cooking over propane, place these on a cookie or baking sheet), close the lid, and grill for 10-15 minutes.
  6. Serve. Once the jalapenos and bacon are cooked to your preferred doneness, remove them from the grill and serve immediately.

How Long to Cook Stuffed Jalapenos

With your grill preheated to 350 degrees F, it will take around 10-15 minutes to cook these stuffed jalapenos. The grilling time may vary slightly depending on the consistency of the heat on your grill and the thickness of your bacon.

If you prefer really crispy bacon, add a few minutes to the total cook time. Keep an eye on your jalapenos and remove them from the grill when the bacon is rendered and the jalapenos have charred a bit.

  • Preheat. When you are ready to cook, preheat your grill to medium heat (around 350 degrees F). If your grill is direct heat, like propane, I recommend you cook the stuffed jalapenos on a cookie sheet. If you are cooking over indirect heat (charcoal, pellet grill, offset smoker) you can place them directly on the grill grates.
  • Make the filling. Place the bratwurst meat in a medium saute pan over medium-high heat Cook the bratwursts for 5-6 minutes, stirring occasionally to break up the meat. Turn the heat down to low and stir in the cream cheese and cheddar cheese. Stir until well combined. Remove from the heat and set aside while you prepare the peppers.
  • Prep the jalapenos. Slice the jalapenos in half, lengthwise. Using a spoon, scrape out the seeds and ribs from the inside of the jalapenos and discard.
  • Stuff. Fill the jalapenos with the cream cheese mixture.
  • Wrap in bacon. Cut the strips of bacon in half so you have 16-20 pieces of bacon. Wrap around the stuffed jalapenos and secure with toothpicks, if necessary. Season with the steak seasoning or your favorite BBQ rub.
  • Grill. Place the stuffed jalapenos on the grill. Close the lid, and cook for 10-15 minutes or until the jalapenos are tender and the bacon is cooked through. Adjust this cook time as needed to get the bacon to your preferred doneness (less time for softer bacon, more time for crispy bacon).
  • Enjoy. Remove the stuffed jalapeno peppers from the grill and serve immediately. If you are taking these to a party, prepare to cook them right before you leave so they are still warm by the time you arrive.

    Couldn’t find any Bratwurst or sausage but found a pack of smoked pulled pork in the freezer, wow did they turn out amazing! Will be packing up separate freezer bags of pulled pork marked “for Jalapeno Poppers” from now on!

    I have made a version of these for years — all kinds of variations! If you don’t care for bratwurst you can use regular pork sausage. Or just cream cheese. Very versatile recipe! If the weather isn’t conducive for grilling – bake them on an oven grill pan (catches the grease) at 400F til bacon is crisp. Be sure to wear gloves when preparing the jalapenos!
