What’s in Greek seasoning?
This flavorful blend combines some of the most popular herbs and spices from Greek cuisine. Here’s what you’ll need to make this seasoning:
- Dried oregano: If you can get Greek oregano, it has a more intense flavor than regular oregano, but don’t stress if you can’t find it. Regular oregano works great, too.
- Kosher salt: Enhances all the other flavors and helps the seasoning stick to your food while drawing out the natural moisture.
- Garlic powder: Adds a savory depth of flavor that makes everything more delicious.
- Onion powder: Works hand-in-hand with the garlic to create a savory foundation that complements the herbs beautifully.

Can I use fresh herbs?
If you want to use fresh herbs instead of dried, you can substitute them using the same amounts listed in the recipe. Fresh herbs will give you an even more vibrant flavor, but you’ll need to store the seasoning in the fridge and use it within 2-3 days. Start with the amounts called for in the recipe, but taste and adjust as you go to get the flavor intensity you want.
How to Make Greek Seasoning
Making this authentic Greek seasoning is incredibly simple and takes just a few minutes. You probably have everything you need already. Here’s how to put it all together:
- Make the Greek seasoning. In a small bowl, whisk together the oregano, salt, black pepper, garlic powder, onion powder, rosemary, dill, and red pepper flakes until evenly combined. Use a fork or whisk to break up any clumps and ensure all the herbs and spices are well distributed throughout the blend.
- Use the seasoning or store for later. For immediate use, mix in the lemon zest and use right away on your favorite proteins or vegetables. For longer storage, keep the lemon zest separate and store the base blend in an airtight container (like these awesome spice jars) in a cool, dry place for up to 2 months. Add the fresh lemon zest when you’re ready to use the seasoning for the brightest, most vibrant flavor.

How you store this Greek seasoning depends on whether you’re using fresh or dried ingredients:

- With dried lemon peel: Store in your pantry in an airtight container for up to 2 months. I love using glass spice jars for storing homemade seasonings.
- Base Blend Without Lemon: You can make the blend without any lemon and store it for 2 months, then add fresh lemon zest when you’re ready to use it for the brightest flavor.

- 1 teaspoon lemon zest or dried lemon peel
- ½ teaspoon black pepper
- ½ teaspoon dried rosemary
- ½ teaspoon dried dill
- ¼ teaspoon red pepper flakes
