Fish & Veggie Rub Recipes

My Fish & Veggie Rub combines dill, garlic, and red pepper flakes that add a punch of flavor and a hint of heat to way more than just seafood! This collection of recipes shows off some of my favorites, but it’s just the tip of the iceberg.

Grilled Lobster Rolls

Three lobster rolls stuffed with grilled lobster displayed on a black serving dish.

If you’re looking for a delicious, unique, and convenient way to enjoy seafood, look no further than my Grilled Lobster Rolls. This isn’t your typical New England sandwich, but trust me, once you try these smoky, buttery beauties hot off the grill, you’ll be hooked. The tender lobster meat gets a gorgeous char that adds incredible depth. My citrus-herb mayo dressing brings the perfect balance of brightness and creaminess. Whether you’re hosting a summer cookout or just want to treat yourself to something special, these rolls are guaranteed to impress. The best part is they’re sure easy to make right on the grill in your own backyard.

Esquites (Mexican Corn Salad)

Esquites (Mexican Corn Salad) is perfect when you need a refreshing side for your next BBQ. It’s light, spicy, and it’s ready in just minutes with a handful of simple ingredients. If you’re ready to discover your new favorite BBQ side, then you’ve got to try my Grilled Esquites.

This off-the-cob version of my Elotes takes everything great about the original, and transforms it into a game-changing salad that’s even easier to devour. This Mexican corn salad is bursting with smoky, charred flavor from the grill, creamy tanginess from the dressing, and a kick of spice from my Fiesta Rub that’ll have you coming back for more. It’s the perfect blend of simple ingredients and bold taste that’ll make your backyard BBQ feel like a fiesta.

Grilled Romaine Lettuce

Three servings of grilled romaine lettuce topped with bacon and blue cheese crumbles on a white serving dish with a side of ranch.

Grilled romaine lettuce is a simple, yet amazing way to prepare a delicious salad. Homemade ranch brushed on the romaine prior to grilling cooks in all sorts of amazing flavor. Finish it off with crumbled bacon and blue cheese and you have a salad unlike any other.

It may seem simple and basic, but grilling will take this romaine up a major notch to greens you’ll actually WANT to eat. I ain’t lying! Grilled romaine is a salad experience unlike any other.

Chicken Orzo Salad

This vibrant Grilled Chicken Orzo Salad combines zesty flavors for a perfectly easy weeknight meal.

I’m super excited to share this amazing Grilled Chicken Orzo Salad recipe with you. It’s one of those dishes my family and I enjoy all the time. Loaded with tender orzo pasta, fresh mozzarella, and sweet cherry tomatoes, it all ties together with rich pesto and a drizzle of balsamic glaze. You can mix in any kind of protein you want or enjoy it as-is. I included some charcoal grilled chicken breasts this time, but the beauty of this dish is its versatility.

Whether you’re hosting a backyard BBQ or meal prepping for the week ahead, this salad is guaranteed to become a family favorite.

Smoky Garlic Butter Beans

A cast-iron skillet filled with smoky garlic butter beans garnished with parsley and seasoned with Fish & Veggie Rub.

I’ve transformed humble butter beans into something extraordinary with this recipe. These creamy, tender beans are slowly smoked with fresh garlic and rich butter, then finished with bright parsley and a hit of lemon juice. The result is pure comfort food that’s equally delicious as a supporting side for your BBQ spread, or as a hearty main dish. The slow smoking process allows these beans to absorb subtle smoky flavor while getting infused with garlic and herbs. They’re perfect for Sunday dinner, potlucks, or any time you want to wow with this irresistible dish. Grab a skillet, fire up your smoker, and let’s make some Butter Beans!
