Simple Honey Corn Muffins
Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- ½ cup sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 cup whole milk
- 2 eggs
- 4 Tablespoons butter melted
- 2 Tablespoons honey
Instructions
- Preheat grill. Set your grill or oven to 350 degrees F.
- Mix dry ingredients. Combine all the dry ingredients for your mix in a large bowl, then whisk together until incorporated.1 cup cornmeal, 1 cup all-purpose flour, ½ cup sugar, 1 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon baking powder
- Mix wet ingredients. In a separate bowl, combine your melted butter and the rest of your wet ingredients, stirring together so everything is mixed.1 cup whole milk, 2 eggs, 4 Tablespoons butter, 2 Tablespoons honey
- Combine it all. Pour your wet mix over your dry ingredients, mixing slowly as you add it. DO NOT whisk, rather use a rubber spatula. You want some lumps in your batter.
- Bake muffins. Line a muffin tin with paper liners, then spoon batter until the liners are around ⅔ full. Place on the grill and close the lid (or in the oven), then bake for 12-15 minutes. Once your muffin tops are golden-brown, there’s no visible wetness, and you get some stickiness with a toothpick test, it’s time to pull your muffins.
- Serve and enjoy. Place your muffins on a platter and serve warm with butter or honey butter, and enjoy.
