BBQ Chicken Quesadilla

This BBQ chicken quesadilla takes a plain old quesadilla and packs it full of flavor. From the BBQ chicken seasoned with my Fiesta Rub to the avocado chipotle sauce, every bite will have you coming back for more.
Chicken Quesadilla on the BBQ
When creating the recipe for this chicken quesadilla on the BBQ, I know I wanted classic chicken quesadilla flavors with everything cooked on the grill. This recipe delivers on all accounts.
The foundation of this recipe is the tasty and juicy grilled chicken. Every good chicken quesadilla needs to have that crazy flavorful chicken, and my Fiesta Rub brings ALL the goodness to this chicken.
Once the chicken is seasoned and grilled to juicy perfection, we layer on shredded quesadilla cheese and load the whole thing with a homemade creamy avocado dipping sauce. The whole thing is absolute perfection.
Ingredients for BBQ Chicken Quesadillas
Believe it or not, you don’t need that many ingredients to make these BBQ chicken quesadillas! Let’s start with the basics.
- 2 chicken breasts
- 1 Tablespoon Hey Grill Hey Fiesta Rub
- 8 large corn tortillas
- 8 ounces quesadilla cheese
You can top these with whatever you prefer, but I suggest using the following:
- 1/2 cup pico de gallo
- 1/4 cup fresh cilantro
- 1 lime, cut into wedges
Last up, you need the following to make the Avocado Chipotle Sauce.
- 1 avocado
- 2 Tablespoons Hey Grill Hey Fiesta Rub
- 1 cup sour cream
- 2 chipotle peppers in adobo sauce
- 2 Tablespoons lime juice
This recipe calls for my Hey Grill Hey Fiesta Rub. This is a BBQ taco seasoning that tastes amazing in tacos, fajitas, quesadillas, and more. You can make this from scratch using my recipe for Homemade Fiesta Rub or purchase a bottle from the Hey Grill Hey Store!
How to Make BBQ Chicken Quesadillas
Ready to make yourself an amazing BBQ chicken quesadilla? Here’s how to make BBQ quesadillas.
- Season. Season the chicken breasts on all sides with Hey Grill Hey Fiesta Rub.
- Grill. With your preferred grill preheated to 400 degrees F, place the seasoned chicken on the grill grates and grill for 6-8 minutes per side. Remove the chicken when it has reached 165 degrees F.
- Chop. When your chicken is done, remove it from the grill. Rest for 5-10 minutes then chop into bite-sized cubes.
- Make the sauce. While the chicken rests, make the avocado chipotle dipping sauce by placing all the ingredients in a blender and blending until nice and smooth. Place the sauce in a lidded container and keep it in the fridge until ready to serve.
- Assemble. Lay out the tortillas and top with cheese and chopped chicken. Finish up with more cheese and top with a second tortilla.
- Final Grill. Place the quesadillas on the hot grill and cook for a couple of minutes. The quesadillas are done when the cheese has melted.
- Dig in! Slice the BBQ quesadilla into wedges and serve with your favorite toppings and the avocado chipotle sauce. Enjoy!
Tips for Making Grilled Chicken Quesadillas
Here are some tips for making these grilled chicken quesadillas.
- Make these from leftovers! You can use pre-cooked or leftover chicken to make these quesadillas.

BBQ Chicken Quesadilla
Ingredients
- 2 chicken breasts
- 1 Tablespoon Hey Grill Hey Fiesta Rub
- 8 large corn tortillas or flour, if you prefer
- 8 ounces quesadilla cheese
BBQ Quesadilla Toppings
- ½ cup pico de gallo
- ¼ cup fresh cilantro
- 1 lime cut into wedges
Avocado Chipotle Sauce
- 1 avocado
- 1 cup sour cream
- 2 Tablespoons lime juice
- 2 chipotle peppers in adobo sauce
- 2 Tablespoons Hey Grill Hey Fiesta Rub
Instructions
- Preheat. Turn on the grill and preheat it to 400 degrees F.
- Season. Season the chicken breasts on both sides with Fiesta seasoning.
- Grill. Place the seasoned chicken breasts directly on the grill grates. Close the lid and grill the chicken breasts for about 6-8 minutes per side, or until the chicken reaches a temperature of 165 degrees F.
- Rest and chop. Remove the BBQ chicken from the grill and rest for 10 minutes before chopping it into small cubes.
- Make the sauce. While the chicken rests, prepare the avocado chipotle sauce. Add all ingredients to a blender jar and pulse until smooth. Refrigerate until ready to serve.
- Assemble your quesadillas. Lay out 4 tortilla shells. Top each with a portion of quesadilla cheese and chopped chicken. Add another layer of cheese and top with a second tortilla.
- Grill the quesadillas. Carefully transfer your tortillas to your hot grill. Cover with a lid and cook for 1-2 minutes, or until the cheese begins to melt. Use a metal spatula to flip the quesadillas. Close the lid and continue cooking for 1-2 minutes, or until the tortillas are cooked through and the cheese is melted.
- Serve. Remove to a cutting board, slice into wedges, and serve with the avocado sauce and additional toppings, as desired.
