Buckle up, because this isn’t your grandma’s potato salad. No, this unique side dish reimagines the humble baked potato in a way you have to taste to believe. It all starts with warm, fluffy chunks of baked potato contrasting against the crisp texture of the skin. Then, all the classic toppings get join the mix. Thick-cut shreds of cheddar cheese, sliced green onions, and crispy bacon crumbles join the party before everything gets tossed in a creamy dressing seasoned with Hey Grill Hey’s signature Beef Rub. Ingredients for Baked Potato Salad

Nobody will believe you when they get a taste, but this Baked Potato Salad uses just 8 common ingredients. Here’s what you’ll want on hand when you’re ready to make it:

The Salad:

  • 6 Baked potatoes (Russet potatoes bake up very fluffy, so they’re ideal when making baked potatoes. You can also use red potatoes or Yukon Golds if that’s what you’ve got.)
  • ¼ cup green onions (sliced)
  • 6 slices bacon (crumbled)
  • 1 cup medium cheddar cheese (shredded)

The Dressing:

  • Hey Grill Hey Beef Rub (Pick some up here to season to taste, or use equal parts Kosher salt, black pepper, onion powder, garlic powder, and mustard powder.)
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tablespoons milk (whole)
  • ¼ cup green onions (thinly sliced)

How to Make Baked Potato Salad

This classic warm salad couldn’t be easier to make. And if you’ve already got baked potatoes you can throw it together in 15 minutes. Here’s how you can pull it off:

  1. Prepare the potatoes. Bake your potatoes with the skin on until they reach an internal temperature of around 200 degrees and become fork tender. You can make your potatoes using a smoker, a grill, or season with salt and bake them in your oven. However you bake them, allow them too cool a bit before cutting into bite-size chunks with a sharp knife.
  2. Build the salad. In a large bowl, combine the warm potato cubes, crispy bacon crumbles, sliced green onions, and shredded cheddar cheese. Toss everything together gently before preparing the dressing.
  3. Make the dressing. In a small bowl, combine the mayo, sour cream, whole milk, Beef Rub, and the rest of the green onions. Stir everything together with a whisk until the seasoning dissolves and you have a thick, creamy dressing.
  4. Combine everything. Pour the zesty dressing over your salad, then give everything a good toss. You want to ensure your potatoes get a healthy coating of dressing, and that each bite has a little of all the goods.

Ingredients

Instructions
 

  • Prepare the potatoes. Transfer the potatoes to large cutting board to cool slightly, then cut into bite-size cubes.

  • Combine everything. Pour the dressing over the salad ingredients, then stir gently with a wooden spoon until is incorporated.
