Why Twice Baked Potato Are Baked… Twice

The best part of twice baked potatoes is that there are actually two best parts. The first bake is going to start crisping the skin, while softening the insides. Once the first bake is done, you scoop out the insides and mix them into a deliciously smooth mash, before returning to the grill or oven for the second phase. Baking your potatoes this way allows you please the whole crowd. You get rich, creamy mashed potatoes, and you get salty, crispy potato skins, all in one bite.Potato filling in bowl being spooned into hollow potato skin.

Can I make twice baked potatoes on my grill?

Not only can you make these crispy, creamy, cheesy potatoes on your grill, you’ll add a depth of flavor with the smokiness it provides. Whether you’re using a grill or a conventional oven, you just need to arrange your potatoes on a baking sheet and run them at 400 degrees F. I like to make mine by placing the baking sheet directly on the grates of my Camp Chef pellet grill, but you can also bake them on the middle rack of your oven.

How to Make Twice Baked Potatoes

  1. Preheat. Set your grill or oven to 400 degrees F. Place full potatoes on a baking sheet, pierce with a fork, coat lightly in olive oil and sprinkle with salt. Bake them for 40 minutes. You don’t need to wrap them in foil, and you’ll actually get a crispier skin. Reduce heat to 350 degrees F.
  2. Half and mix. Remove your potatoes and allow them to cool for 2-3 minutes. Slice them in half and scoop the soft insides into a large bowl. Add the butter to your bowl and allow it to melt before adding the sour cream, cheese, milk, and cream. Use electric beaters to break down the potatoes.
  3. Whip. Add your instant potatoes. Whip the mix until it’s nice and fluffy. You want this to be a nice, smooth contrast to the crispy skins.
  4. More flavors. Stir in your bacon pieces, and green onions, and then top with more shredded cheese, if you like them cheesy. Stir in some of my Beef Rub.
  5. Fill. Load your potato shells with the filling and arrange them on baking sheet. Resist the urge to eat them right now. I know they look delicious, but they’re not done.
  6. Bake. Return your potatoes to your grill or oven for an additional 20-25 minutes at 350 degrees F. You want to bake them until the cheese is melted and your potatoes are golden brown on the edges.
  7. Cool and top. Remove your potatoes and allow them to cool for 5 minutes before adding any remaining toppings like sour cream. The last thing you want to do is ruin the presentation by adding things that will melt too quickly. Enjoy!

Can I freeze twice baked potatoes?

If you want to prepare these ahead of time, or just have some on hand to pop in the oven when you get the craving, you can totally do that. Once you’ve gotten through the first bake and filling your potato shells, place them on a baking sheet and freeze until you can transfer them to zip top bags. Don’t add any additional toppings until you’re ready to heat and eat them.

How to Reheat Twice Baked Potatoes

If you resisted the temptation to eat these all in one sitting and managed to freeze some, you’ll want to know how to reheat them. Simply remove your frozen potato halves from your zip top bag and place on a baking sheet. This is when you want to add your toppings, like more cheesy goodness. Bake for 1 hour at 350 degrees F. Ingredients
 

Filling

  • 1 cup salted butter cut into pieces
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese extra for topping
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 cup instant potatoes
  • 2 teaspoons Hey Grill Hey Beef Rub
  • 1 cup bacon cooked and crumbled
  • 3 green onions sliced

Instructions
 

  • Preheat. Set your grill or oven to 400 degrees F. Pierce the potatoes several times with a fork and place them on a baking sheet. Coat the potatoes in a thin layer of olive oil and season on all sides with salt. Bake for 40 minutes and remove to cool slightly. Reduce the heat in the oven to 350 degrees F.
    8 baked potatoes, 2 Tablespoons olive oil, 2 teaspoons Kosher salt
  • Half and mix. Slice the potatoes in half and use a spoon to scoop a majority of the insides of the potatoes into a large bowl. Add butter pieces to the bowl and let them melt. Add the sour cream, cheese, milk, and cream. Use electric beaters to break down potatoes.

  • Whip. Add instant potatoes. Whip until fluffy.

  • Fill. Load potato shells with filling and place on baking sheet. Top with additional shredded cheese, if desired.
  • Bake. Give your potatoes 20-25 minutes at 350 degrees F, or until cheese is melted and potatoes are golden brown on the edges.
  • Cool and top. Allow to cool for 5 minutes before adding any remaining toppings like sour cream. Enjoy!

    I’m having people to dinner tonight, but I would like to prep these potatoes in the morning. Can I fill and top these potatoes and place in the fridge in the morning and pull them out and bake that same night?

      Hey, I apologize for not seeing this in time! You can do this ahead of time and bake the next day. I talk about freezing to make ahead that way in the post, but it probably wasn’t clear on storing in the fridge overnight. For next time, you can!
