Roasted Tomatillo Salsa

Fire roasted tomatillo salsa is the true salsa connoisseur’s salsa. It is tangy and vibrant with just the right amount of heat and smoky flavor throughout thanks to all of the grilled ingredients. It’s perfect as a chip dip, but it really shines layered onto rich, meaty dishes to provide fantastic balanced flavors.

Raw tomatillos tend to be a bit tart, and roasting them alongside the other vegetables helps to mellow them out and provide a much more rich flavor to the salsa. This salsa is also very versatile, enjoy it on a dip or with tacos, burritos, or nachos.

Ingredients for Roasted Tomatillo Salsa

Here’s what you’ll need on hand to make this tomatillo salsa.

  • 4 tomatillos
  • 1 jalapeno
  • 2 garlic cloves
  • 1/4 yellow onion
  • 1 Tablespoon avocado oil
  • 1 cup cilantro
  • 2 limes

How to Make Roasted Tomatillo Salsa

This salsa is super easy to make, and it tastes amazing when it is homemade! Here’s how to make roasted tomatillo salsa.

  1. Preheat. Fire up your favorite grill (anything will work for this recipe) to 450 degrees F. Allow the grill to fully preheat while you prep your veggies.
  2. Prep the veggies. Place the tomatillos, jalapeno, garlic, and onion in a grill basket. Coat lightly with avocado oil.
  3. Grill the veggies. Once your grill has even heat throughout the grill grates, place the basket of vegetables on the grill grates. Close the lid and cook for 5-7 minutes until the veggies are lightly charred. Remove the veggies from the grill and allow to cool.
  4. Blend. Place the vegetables in a blender or food processor. Add fresh cilantro and lime juice and blend until smooth. Finally, add in small amounts of Feista Rub or salt and pepper to taste.
  5. Enjoy. This salsa is ready to be enjoyed right away however you please. I like to store my homemade salsas and sauces in classic mason jars and keep them in the refrigerator.

How Long to Roast Tomatillos for Salsa

It only takes around 5-7 minutes to roast tomatillos on the grill to make this salsa. You want to roast them until they are charred on all sides, but not too blackened.

I like to roast all my vegetables for this salsa in a grill basket to streamline the process, but you can always roast your tomatillos directly over the heat if you want.

Tips for Making Roasted Tomatillo Salsa

Before you jump into making this salsa, check out a few tips to help you get the most out of this salsa.

  • Embrace the grill basket. Using a grill basket allows you to get a nice char on even the smallest ingredients, like the garlic cloves, without anything falling through the grates.
  • Taste immediately after blending and then again before serving. As the salsa sits and the flavors work together, you may find they also change a little bit. You may want to add more salt or lime to the final product to suit your tastes.
  • Use your salsa within a few days. Since this is a fresh salsa with no added preservatives, it doesn’t have the same shelf life as store-bought salsas. If you don’t use it within 3-4 days, transfer it to a freezer-safe container and freeze it for up to 6 weeks. Defrost in the fridge for a few hours before using.

  • Preheat. Preheat your grill to 450 degrees F with even heat across the grill grates.
  • Roast the vegetables. In a grill basket, add the tomatillos, jalapeno, garlic, and onion. Drizzle with avocado oil and toss lightly to coat. Place the basket on the grill and close the lid. Cook for 5-7 minutes, flipping the vegetables occasionally. Remove the roasted vegetables from the grill and set aside to cool.
  • Prepare the salsa. Transfer the roasted and cooled vegetables to a blender or food processor. Add in the fresh cilantro and lime juice. Pulse until desired consistency and add in the Fiesta Rub (or salt and pepper) to taste and transfer to a serving dish.
  • Enjoy. This salsa is ready to be enjoyed right away, or you can store it in the fridge and serve it within 3-4 days.
