By now most of us are familiar with the term “golden brown delicious”. When I set out to create my Crispy Chicken Wing Batter the idea was simple: create a batter that is easy to use, provides the perfect texture, and yields consistent and repeatable results. After I achieved that, I couldn’t stop coming up with new ways to use it! You’ll find a lot more than just delicious chicken here.


Baja Fish Tacos

If you think you don’t like fish tacos, then think again. One bite of my Baja Fish Tacos and you’ll be a believer. I’m talking fresh, flaky, white fish fillets, fried to golden perfection, served in white corn tortillas. Then, piled high with a creamy, tangy slaw made with crisp, shredded cabbage, sweet honey, and bright lime juice. Topping it all off, I drizzle them with my homemade taco sauce, made with fresh cilantro, zesty lime, and jalapeño for a touch of heat. These tacos are borderline addictive, so be prepared for taco duty once your family gets a taste. Let’s make some tacos.


Buffalo Cauliflower

If you’re looking for a killer appetizer that brings the heat without the meat, look no further than my crispy Buffalo Cauliflower. This recipe combines tender cauliflower florets with a light, crispy coating and a rich, buttery Buffalo sauce. The florets get perfectly golden brown in hot oil, creating an irresistible crunch before your teeth sink into the steamy cauliflower inside. I’ve perfected a homemade Buffalo sauce that coats each piece with the perfect blend of heat, butter, and spices.

Fried Chicken Tenders

Forget going out to the crowded chicken chain for so-so chicken strips, because my Sweet Heat Fried Chicken Tenders knock out the competition. Made with some seriously tender chicken strips and the goods from my Wing Night: Smoked & Fried Wing Kit, these tenders are about to make you the coolest parent on the block. A buttermilk brine with a kiss of my Sweet Rub soaks into your chicken tenders, loading each bite with juicy flavor. Then these tenders get a healthy coating of my Wing Batter for a crispy exterior so light and crunchy you’ll need a minute. Finally, these perfectly fried tenders get a toss in some of my sticky and delicious Sweet Heat BBQ Glaze.

Smoke Fried Hot Chicken Sandwiches

Smoke Fried Hot Chicken Sandwiches. I mean, the name alone has my mouth watering. We’re talking juicy, brined, slow-smoked chicken thighs, fried in a crispy batter to golden perfection. Put it on a bun, pile it up with your favorite toppings, then drizzle on some Sweet Heat BBQ Glaze for a sticky-smooth finish. You can kiss those trips to the chicken chain restaurants goodbye. Once you learn how easy it is to make hot chicken sandwiches at home, you’ll be cooking them all the time.


Smoke Fried Party Ribs

Ribs are a favorite at my house, but finding 6 hours to smoke a whole rack can be tough. That’s where my Smoke Fried Party Ribs come in. Because of the “party” method of smoking the ribs individually, they’re ready to pick clean in less than 90 minutes. Trust me though, after the flavor journey your friends and family go on, they’ll never believe you made them so quickly.
