Smoked Egg Salad

I’m always looking for ways to put a new twist on classic dishes, and this Smoked Egg Salad does just that. While it still has all the rich, tangy of traditional egg salad, and the crunch of chopped dill pickle, However, by smoking the eggs first, you get an egg salad with a deep smoky flavor. The creamy mayo gets a boost or flavor from my Zesty Gold BBQ Sauce, while select herbs and spices add the finishing touches. What you get is an egg salad that tastes nostalgic and brand new all at once. Whether you serve it as a salad to complement those heavy meats, or you want to whip up some tasty sandwiches, this Smoked Egg Salad has you covered. So fire up the smoker, grab your egg carton, and let’s get started.

Ingredients for this Recipe

One of the best things about this Smoked Egg Salad is how you transform a handful of simple ingredients into something irresistible. You likely have most of these items in your fridge or pantry already, so you can whip it up any time that craving strikes. Here’s what to gather so you’re ready to start:

  • 12 eggs
  • ½ cup mayonnaise
  • ¼ cup Zesty Gold BBQ Sauce
  • ¼ cup dill pickles (diced)
  • 2 Tablespoons Italian flat-leaf parsley (optional)
  • ½ teaspoon smoked paprika (as a garnish)

Variations and Substitutions

One of the best things about this Smoked Egg Salad is once you have the basics down, you can customize it. You can swap out the mayo for Greek yogurt, if you want a healthier option. You can use sweet pickles instead of dill, or skip them if you don’t love pickles. I’ve even got an alternate dressing you can try, if you want to branch out:

  • ½ cup mayonnaise
  • 2 Tablespoons stone ground coarse mustard
  • 1 Tablespoon apple cider vinegar
  • 2 teaspoons Hey Grill Hey Sweet Rub
  • ¼ cup sweet pickles (diced)
  • ½ teaspoon smoked paprika (as a garnish)

How Long to Smoke Eggs

To help your eggs take on as much of that mouthwatering smoke as possible, you want to smoke them for at least 30 minutes at 175 degrees F. I smoked the eggs for my salad in my Camp Chef Woodwind Pro 24, but you can make them on any smoker that runs at this temperature. If you’re not sure what level of smoke you want, start on the low end and taste test. You can always add more smoke, but you can’t take it away.

How to Make Egg Salad on the Smoker

Now that you’ve got your ingredients ready, you’re just a few simple steps away from some rich, creamy Smoked Egg Salad. Follow these easy instructions, then prepare for the bite of your life:

  1. Hard boil eggs. Before you infuse your eggs with all that deep, smoky flavor, you need to hard boil them first. While your eggs are boiling, get your smoker preheating so it’s ready once your eggs are cooled and peeled.
  2. Smoke eggs. Place your peeled eggs directly on your smoker grates, and close the lid. You want to give your eggs at least 30 minutes to soak in all that smoky goodness, but you can go up to an hour. I love as much smoke as I can get, so I tend to go on the longer side. It’s totally up to you.
  3. Make dressing. Grab yourself a medium-size bowl, and combine your mayonnaise, Zesty Gold BBQ Sauce, and diced pickles. This combo creates a creamy, tangy base that complements the smoky eggs insanely well.
  4. Chop eggs and combine. Allow your smoked eggs to cool to room temperature, then chop them up and stir them into the dressing. If you like a smoother salad, then you can dice your eggs. Once everything is incorporated, you’ll want to dig in, but resist. I’ve got some finishing tips for you.
  5. Garnish, serve, and enjoy. Give your egg salad a sprinkle of diced Italian flat-leaf parsley and some smoked paprika. These garnishes add some herby notes, and a pop of color that makes your salad easy on the eyes. Grab some bread for sandwiches, or enjoy it as-is.

Ingredients
 

  • 12 eggs hard boiled

Egg Salad Dressing

  • ½ cup mayonnaise
  • ¼ cupe Hey Grill Hey Zesty Gold BBQ Sauce
  • ¼ cup dill or sweet pickles diced
  • 2 Tablespoons Italian flat-leaf parsley garnish
  • ½ teaspoon smoked paprika garnish

Instructions
 

  • Hard boil eggs. Add fresh eggs to a large pan and cover with 1 inch of cool water. Turn the stove to high heat and cover the pan with a lid. Once the water is boiling, set a timer for 6 minutes. As soon as the timer ends, transfer the eggs to an ice bath to cool. Peel and rinse.

  • Preheat smoker. Set your smoker to 175 degrees F with your favorite hardwood.
  • Smoke the eggs. Place the cooled and peeled eggs on the grill. Smoke for at least 30 minutes, or up to 1 hour if you want more smoke flavor. Remove from the smoker and chill completely.
  • Make egg salad dressing. Whisk together the mayonnaise, mustard sauce, and diced pickles.
    ½ cup mayonnaise, ¼ cupe Hey Grill Hey Zesty Gold BBQ Sauce, ¼ cup dill or sweet pickles
  • Dice eggs and combine. Chop the hard boiled eggs to desired consistency and mix into the egg salad dressing. Garnish with some Italian flat-leaf parsley, and serve on toast or with crackers.
