Smoked Egg Salad

  • Hard boil eggs. Add fresh eggs to a large pan and cover with 1 inch of cool water. Turn the stove to high heat and cover the pan with a lid. Once the water is boiling, set a timer for 6 minutes. As soon as the timer ends, transfer the eggs to an ice bath to cool. Peel and rinse.

  • Preheat smoker. Set your smoker to 175 degrees F with your favorite hardwood.
  • Smoke the eggs. Place the cooled and peeled eggs on the grill. Smoke for at least 30 minutes, or up to 1 hour if you want more smoke flavor. Remove from the smoker and chill completely.
  • Make egg salad dressing. Whisk together the mayonnaise, mustard sauce, and diced pickles.
    ½ cup mayonnaise, ¼ cups Hey Grill Hey Zesty Gold BBQ Sauce, ¼ cup dill pickles
  • Dice eggs and combine. Chop the hard boiled eggs to desired consistency and mix into the egg salad dressing. Garnish with some Italian flat leaf parsley, and serve on toast or with crackers.
    2 Tablespoons Italian flat leaf parsley, ½ teaspoon smoked paprika
