Garlic Butter Round Steak

This recipe takes a budget-friendly cut of beef and transforms it into a gourmet meal with just some simple seasonings and a butter that’s out of this world. What is round steak?

If you’re not familiar with round steak, let me break it down for you. Round steak comes from the rear leg of the cow, an area also known as the round. This cut is very lean and can be a bit tough if not cooked properly. But don’t let that scare you off, round steak is super flavorful when done just right. It’s a great option if you’re looking for an affordable cut that still packs a beefy punch. With the right seasoning and cooking method, round steak can be transformed into a mouthwatering meal the whole family will love.

What You Need for This Recipe

The way this recipe takes an affordable cut like round steak and makes it oh-so tender and delicious all comes down to the ingredients. Here’s everything you’ll need for making this tasty dish, most of which you’ll have already:

  • 2 teaspoons Hey Grill Hey Beef Rub (you can use equal parts salt and pepper)
  • 1 Tablespoon avocado oil
  • 4 cloves garlic
  • 4 tablespoons butter
  • 2 sprigs fresh thyme
  • 1 teaspoon Worcestershire sauce

Garlic Thyme Butter

The real star of this Garlic Butter Round Steak is the garlic thyme butter. This rich, herby mixture elevates simple round steak to new heights. The combination of melted butter, minced garlic, fresh thyme, and a little savory Worcestershire sauce creates a luscious, flavorful sauce that complements the beef perfectly. As the butter sizzles in the hot skillet, it soaks up all those delicious browned bits left behind from searing the steak, adding an extra layer of flavor and tenderness. Trust me, this stuff is so good you’’ll drizzling any leftovers on everything.

Searing Your Steaks

I’m cooking my steak in a cast iron skillet, which is perfect for getting a beautiful sear on the exterior. By quickly searing the steaks over heat, I develop a flavorful crust while keeping the interior tender. Give your round steaks just 2-3 minutes per side to seal in those juices. Then after a rest, let them finish cooking to your desired doneness in the garlic thyme butter. Use a reliable meat thermometer to ensure your steak reaches the perfect internal temperature for your liking.

  • Rare: 125 degrees F
  • Medium Rare: 135 degrees F
  • Medium: 145 degrees F 
  • Medium Well: 155 degrees F
  • Well Done: 160 degrees F

How to Make Round Steak

It’s time to turn this economy beef into a future family favorite. Once you’ve got your round steak and flavorful ingredients assembled, just follow these easy steps:

  1. Preheat skillet. Preheat a large cast iron skillet on your grill or oven over medium-high heat. You want to get it nice and hot so your steaks develop a nice sear.
  2. Season steaks. Season the round steak on all sides with some of my signature Beef Rub. You can also use equal parts salt and pepper, or your favorite steak seasoning. Keep in mind the garlic, thyme, and butter will add some serious flavor later.
  3. Sear steaks. Drizzle your skillet with some avocado oil, or your preferred cooking oil, and heat until it shimmers. Carefully place your seasoned steak, then cook for 2-3 minutes per side, developing a nice crispy sear. Next, remove the steaks to a plate to rest while you make your delicious and herby garlic butter.
  4. Make garlic butter. Add your butter to the hot pan and allow it to melt. Next, and it the garlic, fresh thyme, and Worcestershire sauce. Scrape the bottom of the skillet to loosen any seared on bits from the steak for extra savory flavor. Remove your pan from the heat and allow the garlic to finish cooking with the pan heat.
  5. Slice, drizzle, and serve. Slice the steak into thin strips, then return it to the pan for presentation. Spoon over top of your sizzling steak with the rich garlic butter, and serve with some of my Skillet Potatoes, or your favorite veggies.

  • Preheat skillet. Preheat a cast iron skillet on your grill or oven over medium-high heat.
  • Season steaks. Season the round steak on both sides with Hey Grill Hey Beef Rub, or your favorite steak seasoning. You can also use equal parts salt and pepper.
    1 2 pound round steak, 2 teaspoons Hey Grill Hey Beef Rub
  • Sear steaks. Drizzle avocado oil in the pan and heat until it shimmers, then add in the seasoned steak. Sear for 2-3 minutes, then flip steak and sear for 2-3 more minutes for medium rare. Remove the steak to a plate and let it rest.
    1 Tablespoon avocado oil
  • Make garlic butter. Add the butter to the hot pan, followed by the garlic, thyme, and Worcestershire sauce. Scrape the bottom of the skillet to loosen any seared on bits from the steak. Turn off the heat and let the heat from the pan finish cooking the garlic.
    4 cloves garlic, 4 Tablespoons butter, 2 sprigs fresh thyme, 1 teaspoon Worcestershire sauce
  • Slice, drizzle, and serve. Slice the steak into thin strips, then return it to the pan. Spoon the garlic butter over the top of your steaks. Serve with your favorite potatoes or veggies.

    Sear steak for only 2 minutes if you like yours more on the rare side. Otherwise pretty good and easy recipe that doesn’t require a lot of ingredients.

    By scraping the steak bits off the pan, the whole sauce was bitter with burnt pan scrapings. If the steak hadn’t been seared in a cast iron griddle, it would have been fine.
