Grilled Peach Salad

This salad tastes like summer! It’s fresh and vibrant, but very well balanced. Sweet peaches, salty bacon, crunchy pecans, and creamy mozzarella cheese combine for a salad that feels more like a meal than a side dish.

This salad makes for a great side dish, but it also holds its own as a main course. I’ve also had great luck taking this salad to potlucks and neighborhood events. The salad is unique and incredibly delicious. It doesn’t last long!

Grilled Peach Salad Dressing

The real star of this salad is the white balsamic vinegar dressing. It’s light with a sweet and punchy kick that pairs perfectly with the sweet peaches. Here’s what you need to make the dressing.

  • 1/4 cup olive oil
  • 1/4 cup white balsamic vinegar
  • 2 Tablespoons honey
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger

To make the dressing, combine all ingredients in a lidded glass jar (mason jars work great for this), and shake well to combine. I also like to use a mason jar when making this dressing because any leftovers can be stored in the refrigerator in the same jar.

How to Make Grilled Peach Salad

This salad is a breeze to make and great if you’re short on time. You’ll need around 15-20 minutes total to make this recipe. Here’s how to make a grilled peach salad.

  1. Preheat. Turn on the grill (anything on your back porch will work just fine for this recipe), and preheat to 450 degrees F.
  2. Make the dressing. Follow the instructions in the previous section to make the salad dressing. Set it aside until ready to use.
  3. Grill the peaches. Coat the peaches in olive oil, and place them directly on the grill grates. Cook for 3-4 minutes per side, flipping once.
  4. Assemble the salad. Remove the peaches from the grill. Arrange the salad greens in a large bowl, and top with mozzarella, basil, bacon, grilled peaches, and chopped pistachios. You can also add freshly sliced onions to your salad, but this is optional.
  5. Enjoy! Give the salad dressing an extra shake and drizzle it over the assembled salad. Serve immediately.

If you are planning on taking this salad to a party or get-together, wait to add the dressing until right before serving. This will help keep everything crisp and keep the salad from going soggy en route.

Tips for Making Grilled Peach Salad

Here are some tips for making this delicious grilled peach salad.

  • Add a protein. Pair this salad with simple grilled chicken, salmon, or even pork chops for a filling main dish.
  • Get creative with flavors. Feel free to swap the greens and cheeses to switch up the flavors. We’ve tried with feta instead of mozzarella for more punch or arugula instead of the spring greens for a more peppery bite.
  • Use firm peaches. Use peaches that are a little firmer than you would pick for eating whole. Grilling softens the peaches and releases quite a bit of sugar. Using slightly underripe peaches will give you a better-finished texture when grilling.

Ingredients
 

  • 3 cups spring mix
  • 4 ounces fresh mozzarella torn
  • ¼ cup basil rough chop
  • ¼ cup crumbled bacon
  • ¼ cup red onion thinly sliced *optional*
  • 2 Tablespoons pistachios
  • 2 peaches cut into wedges
  • 1 teaspoon olive oil

White Balsamic Dressing

Instructions
 

  • Preheat. Preheat your grill to High heat (around 450 degrees F).
  • Prepare the salad dressing. Combine all ingredients in a glass jar and shake well to combine.
  • Grill. Toss the sliced peaches in the olive oil, coating lightly on all sides. Place the oiled peaches directly on your grill grates and grill for 3-4 minutes per side.
  • Assemble the salad. Arrange the salad greens on the bottom and top with the mozzarella, basil, bacon, and onions (optional). Nestle the grilled peaches into the salad and sprinkle with chopped pistachios.
  • Add dressing. Shake the salad dressing to ensure it is well mixed and then liberally drizzle it onto the arranged salad immediately before serving.

    I made it and will again. I didn’t add red onion, but will consider next time. Pistachios gave it a nice crunch. Grilled peaches are nice sweet flavor.

    Nice mixture of textures and flavors. Definitely need to keep and eye on the peaches, they will char fast with a hot grill.
