You may not know this, but corn fritters are a beloved Southern tradition. These savory treats go all the way back to Native American cuisine, so corn plays a big part. Over the years, this versatile dish found its way onto many different menus. Essentially, they’re a delightful combination of corn kernels and other veggies mixed with a light batter, then fried to crispy perfection. The result is an amazing blend of sweetness from the corn and peppers, with savory notes from the seasonings, all wrapped up in a satisfyingly-crunchy bite.
Ingredients for This Recipe
Here’s what you’ll need so you can whip up some mouthwatering corn fritters in just a few minutes:
- 3 cups corn kernels
- 1 cup sharp cheddar cheese (shredded)
- ¾ cup all-purpose flour
- ¼ cup scallions (thinly sliced)
- ¼ cup orange bell pepper (finely diced)
- 1 Tablespoon Beef Rub
- 1 teaspoon baking soda
- ½ cup milk
- 2 eggs
- 2 teaspoons apple cider vinegar
- ½ cup Tablespoons salted butter
How to Make Corn Fritters in a Skillet
Once you’ve got your ingredients gathered, you’re just a few, quick steps away from crispy and delicious corn fritters. Get your favorite skillet heating up, get your veggies sliced up, and you’re ready to go.
- Preheat. Fire up your 12-inch cast iron skillet over low to medium heat on your grill or stovetop. You can use a standard pan, but the even heat distribution of cast iron ensures crisp fritters.
- Mix dry ingredients. In a medium-sized bowl, combine the array of flavors. Mix your sweet corn kernels, bright bell peppers, zesty scallions, and sharp cheddar cheese. Add the flour, Beef Rub, and baking soda, creating an aromatic base for your fritters.
- Mix wet ingredients. In a separate bowl, whisk together the milk, eggs, and apple cider vinegar. This mixture will bind everything together and add a slight tang to balance the sweet corn.
- Combine it all. Pour the wet ingredients over the dry ingredients, then stir until you have a corny batter. The kernels should be evenly distributed, so your guests get a burst of corn in every bite.
- Fry the batter. Melt butter in your preheated skillet for pan-frying your fritters. Scoop about ¼ cup of corn fritter batter, gently flattening them with the back of your spoon. Cook for 3-5 minutes in the sizzling butter, or until the edges turn golden brown and crispy. Flip your fritters and repeat, so both sides get that perfect crunch.
- Serve and enjoy. Transfer your golden-brown fritters to a serving platter. Optionally, garnish with a dollop of cool sour cream and sprinkle some sliced green onions for the finishing touch.
Tips for the Best Corn Fritters
If you do nothing more than follow the recipe, then your family can enjoy yummy corn fritters in no time. However, if you want to make your corn fritters unforgettable, then I’ve got a few tips to push them over the edge:
- Go with cast iron. One of the best things about corn fritters is the contrast of the crispy exterior and the soft, warm inside. To get the perfect, golden exterior, I fry my fritters in a 12-inch cast iron skillet. The even heat helps make sure every bite is crunchy and perfect.
- Don’t overcrowd. Cook your fritters in batches so you can avoid overcrowding the pan. This allows each fritter to develop those irresistible edges and cook evenly.
- Butter up. Because you’re cooking your fritters in batches, it’s important each batch gets the same love. Add a small pat of butter between batches so you can maintain that rich, buttery flavor and prevent sticking.
- Go fresh. For the sweetest flavor, I love to use fresh sweet corn kernels (when in season). Frozen corn works great too, but remember to thaw and drain well before using.

Ingredients
- 3 cups corn kernels
- 1 cup sharp cheddar cheese shredded
- ¾ cup all-purpose flour
- ¼ cup scallions thinly sliced
- ¼ cup orange bell pepper finely diced
- 1 Tablespoon Hey Grill Hey Beef Rub or equal parts salt, pepper, garlic powder, and onion powder
- 1 teaspoon baking soda
- ½ cup milk
- 2 eggs
- 2 teaspoons apple cider vinegar
- ½ cup salted butter
Instructions
- Preheat. Heat a 12-inch cast iron skillet over low to medium heat.
- Mix dry ingredients. In a medium-sized bowl, combine all of your dry ingredients, including your corn, peppers, scallions, and cheese.3 cups corn kernels, 1 cup sharp cheddar cheese, ¾ cup all-purpose flour, ¼ cup scallions, ¼ cup orange bell pepper, 1 Tablespoon Hey Grill Hey Beef Rub, 1 teaspoon baking soda
- Mix wet ingredients. Combine the milk, eggs, and vinegar.½ cup milk, 2 eggs, 2 teaspoons apple cider vinegar
- Combine it all. Pour your wet ingredients over the dry ingredients, then stir until you have a corny batter.
- Fry the fritters. Melt butter into your cast iron skillet, enough to cover the bottom, then plop in roughly ¼ cup spoonfuls of batter into skillet. Smash down slightly with back of cup, almost like little pancakes. Fry for 3-5 minutes, or until golden and crispy. Flip your fritters over, and repeat until the other side is done.½ cup salted butter
- Serve and enjoy. Remove your fritters to a serving platter, and garnish with sour cream and sliced green onions, or your favorite toppings. Enjoy!
