Ingredients for Spiced Citrus Salmon
You might be wondering how a Double Smoked Ham Kit ended up in a salmon recipe. Trust me, I was skeptical too. But when my friend TC of Red Beard Butcher suggested it, I knew I had to give it a try. The good news is, all the ingredients you need for this mouthwatering salmon come conveniently packaged in my Double Smoked Ham Kit:
- 3 Tablespoons Hey Grill Hey Zesty Gold BBQ Sauce (recipe here)
- 2 Tablespoons Sugar and Spice Rub
- 1 teaspoon Kosher salt
- 3 Tablespoons Hey Grill Hey Spiced Citrus BBQ Glaze
I know this seems like an unusual option for seasoning your salmon, but you’ll trust me once you taste it. The unexpected combination of flavors creates a truly unique and delicious dish that’ll have your guests asking for the recipe. So don’t let the “ham kit” label fool you, these ingredients work together for all kinds of meats.
How Long to Smoke Salmon
For this recipe, you’ll be smoking your salmon in two stages. The initial smoke lasts about 45 minutes to an hour. During this stage, your salmon slowly cooks while absorbing all that rich smoky goodness. You’re looking for your salmon to hit a target temperature of around 135 degrees F.
After the initial smoke, it’s time for the glaze. Give your salmon a healthy coating of the Spiced Citrus BBQ Glaze, then close the lid and continue to smoke for another 10-15 minutes. Once your salmon reaches an internal temperature of 145 degrees F, then it’s ready to enjoy.
Note on temperature: Remember, these times are estimates. You want to pay close attention to the internal temperature of your salmon. Make sure you’ve got a reliable instant-read thermometer on hand (like my Thermapen ONE) to ensure food safe temperatures.
How to Make Salmon on the Smoker
If you’re ready to enjoy a uniquely delicious smoked salmon, then just follow this handful of easy steps:
- Preheat smoker. First up, fire up your smoker and set it to 275 degrees F.
- Slather. Next, grab your Zesty Gold BBQ Sauce, then generously drizzle it over your salmon. Use a gloved hand to spread it evenly, ensuring every inch is coated in tangy deliciousness.
- Season. Now that you’ve got a good base with your slather, liberally sprinkle the Sugar & Spice Rub over your salmon, followed by a teaspoon of Kosher salt. Gently press the seasonings in, but resist the urge to spread to avoid clumping.
- Smoke. Next, place your beautifully seasoned salmon directly on the smoker grates. Close the lid and allow it to cook for 45 minutes to an hour, so your salmon can soak up that irresistible smoky flavor.
- Glaze. Once your salmon hits an internal temperature of 135 degrees F, it’s time for you to get glaze crazy. Brush on the Spiced Citrus BBQ Glaze, adding a burst of bright, tangy flavor. Keep smoking for another 5-10 minutes until your salmon reaches the desired 145 degrees F.
- Slice and serve. After that, remove your salmon to a serving platter or cutting board, slice it as desired, then prepare for a spiced salmon you won’t believe.
Storing Leftover Spiced Citrus Salmon
If you have any leftover salmon, you can keep it in the fridge and enjoy it for a few more days. Simply allow your salmon to cool, then place any remaining salmon in an airtight container and place it in your refrigerator. Stored this way, your salmon will stay fresh for up to 3-4 days in the fridge.
To reheat your salmon, preheat your smoker or oven to 275 degrees F. Place your salmon on a baking sheet, then place over heat and allow it to warm for 10-15 minutes. Once your salmon warms through, it’s ready to enjoy all over again. Of course, cold leftover salmon is also totally delicious and already ready to devour.

- 1 2-3 pound salmon filet
- 2 Tablespoons Hey Grill Hey Zesty Gold BBQ Sauce or yellow mustard
- 2 Tablespoons Sugar and Spice Rub
- 1 teaspoon Kosher salt
- 3 Tablespoons Hey Grill Hey Spiced Citrus Glaze
Instructions
- Preheat smoker. Set your smoked to 275 degrees F.
- Slather. Drizzle on a generous layer of the Zesty Gold Sauce (or yellow mustard) on your salmon, then spread it evenly with a gloved hand.1 2-3 pound salmon filet, 2 Tablespoons Hey Grill Hey Zesty Gold BBQ Sauce
- Season. Next, sprinkle the Sugar & Spice Rub liberally on your slathered salmon, and sprinkle a teaspoon of Kosher salt. You can press it in gently with your glove, but don’t try to spread it around or you’ll get clumping.2 Tablespoons Sugar and Spice Rub, 1 teaspoon Kosher salt
- Smoke. Place your seasoned salmon directly on the smoker grates, then close the lid and allow to smoke for 45 minutes to an hours.
- Glaze. Once your salmon reaches an internal temperature of 135 degrees F, add the spiced citrus glaze. Then, continue smoking another 5-10 minutes until your salmon reaches 145 degrees F.3 Tablespoons Hey Grill Hey Spiced Citrus Glaze
- Slice and serve. Once your salmon is done, remove it to a cutting board, slice it, and enjoy.
