Jalapeño Lime Fish Taco Sauce

Providing the right sauce for fish tacos is the difference between legends and ordinary humans. And trust me when I tell you my Jalapeño Lime Fish Taco Sauce will make you the hero of your next fish taco night. The mayo and sour cream give the sauce its smoothness and zesty flavor, while a blend of herbs and spices give it layers of flavor. With brightness from the lime juice and just a touch of heat from the jalapeño, this sauce really has it all. It may be the best fish taco sauce ever, but you can be the judge once you get a taste of it. Now, let’s sauce.

Fish Taco Sauce Ingredients

Now that you have an idea of how amazing your fish tacos will taste with drizzled with this sauce, let’s talk about what’s in it. You’ll probably have to swing by the grocery store for a few fresh produce, but you likely have most of this on hand already:

  • ½ cup mayo
  • ½ cup sour cream
  • 1 jalapeño (seeds optional)
  • 1 bunch cilantro
  • ½ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • juice of 2 limes
Various raw ingredients in glass bowls on countertop.

Recipe Variations

Personally, I think the best part about making your own sauces is having total control over the ingredients and flavor. I’m sure you could get really crazy with the combinations in this sauce (and I want to hear about them if you do). Here are a couple quick variations you can make to customize this recipe:

  • Creaminess. I really love the smoothness and zest I get from the combination of mayor and sour cream, but not everyone loves both. You can easily do all of one or the other if you or your guests have a preference. You can even use Greek yogurt if you want a healthier option.
  • Heat. If you like a little spicy kick to your sauce, then leave the seeds in your jalapeños before blending. You can totally take them out, though, if you want the sweetness without the heat. You can even use stronger peppers if you’re feeling bold.
  • Freshen up. If you want to add a little brightness to your fish taco sauce, then you can add a little extra lime juice. This is also a great way to freshen up your sauce if it starts to lose its punch.

How to Make Fish Taco Sauce

If I’ve done my job right then your mouth should be good and watering by now for this smooth, creamy sauce. The good news is you don’t have to wait. Once you’ve got your ingredients prepped, you just need to follow these few simple steps:

  1. Assemble and prep ingredients. Gather your mayo, sour cream, jalapeño, cilantro, Kosher salt, black pepper, garlic powder, onion powder, and limes. Juice the limes, and if you want to remove the seeds from your jalapeño, now is the time. Otherwise, you don’t any further prep and you’re ready to make this  sauce. Easy, right?
  2. Combine ingredients. Next comes the fun part. Combine all your jalapeño, fresh lime juice, and the rest of your ingredients in a blender jar or food processor. Then, then let the machine do the work. Puree your ingredients until you have a nice, smooth consistency.
  3. Chill and serve. Now, this rich, herby sauce will taste great right out of the blender. However, if you want to get the most flavor possible, I highly recommend letting it chill in the fridge for a few hours. Trust me on this.
