Bacon Wrapped Smoked Pork Loin

This bacon wrapped smoked pork loin is a great Sunday roast that only requires a few ingredients and a couple of hours of your time. It takes a lean pork loin and punches it full of tasty flavor from the sweet rub, salty bacon, and tangy BBQ sauce.
Bacon Wrapped Smoked Pork Loin
Pork loin is a super tasty, albeit lean cut of pork. To add some much-needed flavor and moisture, I like to add a nice bacon blanket around the outside. The smoky, salty, fatty bacon is just what this pork loin needs to reach its full potential.
I also add my signature Sweet Rub seasoning to bring in some classic BBQ flavor with smoky paprika and brown sugar. How you finish the pork loin is up to you. You can baste with BBQ sauce for tangy, saucy, bite through bacon. Or you can broil for bacon that is crisper and rendered.
Ingredients for Bacon Wrapped Smoked Pork Loin
This pork loin doesn’t need a lot to give it tons of flavor. It’s all in the quality of the ingredients. I prefer to keep things really easy for this pork loin. All you need is the roast, bacon, a quality rub, and a flavor-packed BBQ sauce.
- 2-3 pound pork loin roast. This size roast will serve 4-6 people. It makes for a nice Sunday dinner for the entire family. If you need to serve more than 5 people, you’ll need a second roast.
- 1 pound bacon. You don’t need thin or thick-cut bacon for this pork loin. Go with regular thickness bacon. If you want to get extra fancy, you can make your own using my recipe for Homemade Smoked Bacon.
- 2 Tablespoons Sweet Rub. This sweet rub is a Hey Grill Hey cornerstone. I use it in many of my recipes, and it’s definitely one to have in your pantry at all times. You can make your own using my recipe for Best Sweet Rub or you can purchase it from the Hey Grill Hey Store.
- 1/4 cup Whiskey Peach BBQ Sauce. This sauce is equal parts sweet and savory with an amazing flavor profile. It also tastes amazing on pork. Just like with the sweet rub, you can make it from scratch using my recipe for Whiskey Peach BBQ Sauce or buy it pre-made from the Store. If whiskey peach isn’t your favorite, go ahead and substitute for your favorite BBQ sauce. It’ll still turn out amazing.
That’s all you’ll need to make this pork loin. Easy right? Now, let’s get to the process.
How to Smoke Bacon Wrapped Pork Loin
Not only are there only a few ingredients needed for this pork loin, but it’s also ridiculously easy to make as well. If you have a few hours to spare to let this chill in the smoker then you’re set for success.
- Preheat. Light up your favorite smoker and preheat to 275 degrees F. I’ve got a handful on my porch that I rotate through using. If you’re in the market for a good grill, check out my BBQ Grill Guide! I recommend using light wood with pork. Apple, cherry, maple, alder, or pecan woods will all taste amazing with this roast.
- Season and wrap. Season the pork loin on all sides with Sweet Rub. Layout strips of bacon and wrap them around the pork. Use toothpicks to help secure the bacon to the roast as needed (just remember to remove them before you slice and serve to your guests!).
- Smoke. Place the bacon wrapped pork loin directly on the grill grates of the preheated smoker. Close the lid, and smoke the meat for 2 to 2 1/2 hours, or until the internal temperature reaches 145 degrees F (see the next step for finishing up the pork).
- Choose your adventure! Sauce or sear. The next step depends on how you like your bacon. For soft bacon: baste the pork when it reaches 130 degrees F and finish smoking until the temperature reaches a final 145 degrees F. For crispy bacon: remove the fully smoked pork (temp reading 145 degrees F), and broil in the oven for 2-3 minutes.
- Enjoy. Remove the pork from the heat to a serving platter or cutting board. Rest the meat for 10 minutes while you finish preparing the table and the rest of dinner. Slice the pork loin and serve with extra BBQ sauce as desired.
How Long to Smoke a Bacon Wrapped Pork Loin
This 2-3 pound bacon wrapped pork loin takes approximately 2 to 2 1/2 hours to fully cook on a smoker preheated to 275 degrees F.
Keep in mind that smaller or larger loins will cook to a slightly shorter or longer time. In fact, I recommend using time as a reference point only, and not as an end-all be-all. You’ll have more success with your BBQ (and all cooking for that matter) if you cook to temperature and not to time.
Invest in a reliable instant read thermometer and cook this roast until the internal temperature through the thickest part of the meat reaches 145 degrees F. This will ensure the meat is safe to eat and not overcooked.

Bacon Wrapped Smoked Pork Loin
Ingredients
- 2-3 pound pork loin
- 1 pound bacon
- 2 Tablespoons Hey Grill Hey Sweet Rub recipe in notes
- ¼ cup Whiskey Peach BBQ Sauce recipe in notes
Instructions
- Preheat. Preheat smoker to 275 degrees F. Apple, cherry, maple, alder, or pecan woods all work great for this recipe.
- Season. Season the pork loin well on all sides with the Sweet Rub.
- Wrap in bacon. Arrange bacon, piece by piece, across the surface of the pork loin. Secure with toothpicks, if necessary.
- Smoke. Transfer pork loin to the smoker grates, close the lid, and smoke for 2-2.5 hours, or until the internal temperature reads 145 degrees F.
- Add sauce. (Optional step for soft bacon). When the pork loin reaches 130 degrees F, baste liberally with my Whiskey Peach BBQ Sauce or your favorite BBQ sauce.
- Broil. (Optional step for crispy bacon). Remove your fully smoked pork loin to a baking sheet and broil in your oven for 2-3 minutes.
- Rest, slice, and serve. Rest your finished pork loin for 10 minutes before slicing and serving.
