Grilled Zucchini and Squash

- 2 yellow summer squash cut into rounds
- 2 zucchini cut into rounds
- ½ cup sweet onion sliced
- 4 Tablespoons butter melted
- 2 Tablespoons Hey Grill Hey Fish & Veggie Rub homemade veggie seasoning recipe in notes
- 1 teaspoon lemon juice optional
Preheat. Preheat your grill for high temperature, direct heat grilling (around 450 degrees F).
Season. Place the sliced squash, zucchini, and onions in a grill basket and toss to combine. Drizzle the melted butter on the vegetables, stirring gently to coat, and season liberally with Fish and Veggie Rub.
Grill. Place the basket directly on the grill grates and close the lid. Grill the seasoned veggies, stirring gently every 3-4 minutes until they are slightly charred and fork tender.
Serve. Remove the basket from the grill and serve the vegetables immediately, with a squeeze of fresh lemon juice, if desired.
