BBQ Baked Beans

- 1 pound bacon diced
- 1 medium yellow onion diced
- 2 jalapenos seeded and diced, can use 1 green pepper instead
- 4 cloves garlic minced
- 4 cans great northern beans drained and rinsed
- 1 can black beans drained and rinsed
- 1 cup brown sugar
- 1 cup Hey Grill Hey Texas Style BBQ Sauce or your favorite BBQ sauce
- 1 cup brown soda Dr. Pepper is best, but root beer and cola also work
- ¼ cup apple cider vinegar
- 2 Tablespoons molasses
- 2 Tablespoons Dijon mustard
- 2 Tablespoons tomato paste
- 1 Tablespoon salt
- 2 teaspoons black pepper
Preheat. Preheat your smoker or oven to 275 degrees F.
Cook the bacon and veggies. Preheat a large cast iron skillet over medium-high heat. Add in the diced bacon and cook until rendered, but still soft. Drain off all but a tablespoon of the bacon grease. Add the onions, jalapenos, and garlic to the pan and continue cooking until the bacon is crisp and the vegetables are soft.
Add remaining ingredients. Add the beans, brown sugar, BBQ sauce, soda, vinegar, molasses, mustard, tomato paste, and salt and pepper to the pan. Stir to combine.
Bake the beans. Transfer the pan to the oven or smoker and bake for 1 hour. The sauce will thicken and reduce during the cooking process.
Dig in! Serve the baked beans from the warm skillet and enjoy.
