Cherry Berry Dutch Oven Cobbler

Ingredients

  • 1 box yellow cake mix
  • 1 12-oz can lemon lime soda
  • 8 Tablespoons salted butter cut into 1/2 inch cubes
  • 2 cups frozen mix of cherries, blueberries, and blackberries
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • zest and juice of 1 lemon

Instructions

  • Preheat. Preheat your grill or smoker to 375 degrees F. You can also cook this in your campfire using hot coals.
  • Add the fruit. In the bottom of a well-seasoned cast-iron skillet or Dutch oven, combine the frozen fruit, brown sugar, flour, and lemon zest. Stir to coat.
  • Make the cake layer. In a medium mixing bowl, stir together the cake mix, lemon lime soda, and lemon juice until just barely combined. Fold in the cubed butter and pour the mixture over the berries, covering them completely.
  • Cook. Place the skillet on the grill or the Dutch oven in the coals with a lid on and bake the cobbler for 30-45 minutes, or until a toothpick inserted in the center comes out clean.
  • Enjoy! Remove the cobbler from the heat. Allow to cool slightly before serving warm with whipped cream or ice cream.
