Citrus Marinated London Broil with Cilantro Gremolata

This recipe for marinated London broil has a simple marinade that is ridiculously full of flavor. The cilantro gremolata adds the perfect touch to the recipe, and the whole thing comes together for a fantastic meal.

Ingredients

  • 1 2-3 pound London broil

London Broil Marinade

  • ½ cup olive oil
  • zest of 1 lemon
  • zest of 1 lime
  • 2 cloves garlic minced
  • 1 Tablespoon lemon juice (bout 1 whole lemon
  • 2 teaspoons lime juice about 1 whole lime
  • 2 teaspoons salt
  • 1 teaspoon hot sauce chipotle pepper base preferred
  • 1 teaspoon black pepper

Cilantro Gremolata

  • 1 yellow, red, or orange bell pepper roasted, skin removed, de-seeded, and finely minced
  • 1 Tablespoon lemon juice
  • zest of 1 lemon
  • 1 bunch cilantro leaves finely minced

Instructions

  • Marinade the London broil. Combine all of the ingredients for the marinade in a gallon zip top bag and add the London broil. Remove the steak from the fridge and allow to come to room temperature a half an hour before you're ready to grill.
  • Preheat the grill. Prepare your grill for high direct heat (about 450 degrees F) and allow it to preheat so the grill grates are nice and hot.
  • Make the cilantro gremolata. While the grill is preheating, combine all of the ingredients for the gremolata in a small bowl. Set aside.
  • Grill the London Broil. Remove the London broil from the marinade and shake off any excess. Place the steak directly on the grill grates. Allow the steak to cook for 6-12 minutes per side, or until the meat reaches your desired doneness (120 degrees F for rare, 130 for medium rare, 140 for medium, 150 for medium-well, and 160 for well done).
  • Rest, slice, and serve. Remove the London broil to a large cutting board and allow to rest for at least 10 minutes before slicing thinly, against the grain. Top with the cilantro gremolata and serve!
