Preheat a 12" cast iron skillet over medium-high heat.
Melt beef tallow or butter in the bottom of the skillet and add sliced potatoes.
Sprinkle potatoes with Chicken Seasoning and stir potatoes gently with a spatula to coat potatoes with seasoning and beef tallow.
