Smoked Baked Potatoes

- 6 large Russet potatoes
- 4 Tablespoons olive oil
- 2 teaspoons coarse salt
- 2 teaspoons black pepper
Preheat your smoker to 225 degrees F. Really any wood works well with baked potatoes. You can experiment to see which is your favorite.
Wash and dry your baked potatoes. Pierce with a fork on all sides. Drizzle with olive oil and rub all over the skin of the baked potatoes. Season each with the salt and pepper.
Place the potatoes on the smoker at 225 degrees F. Close the lid and smoke for 2 hours or until the potatoes pierce easily with a fork.
