Ingredients

  • 12 corn or flour tortillas
  • 3 pounds flap, skirt, or flank steak
  • 3 Tablespoons Hey Grill Hey Fiesta Rub recipe in notes section
  • 1 medium yellow onion
  • 2 bell peppers red, orange, or yellow
  • 2 Tablespoons avocado oil

Assorted Fajita Toppings

  • sour cream
  • cheese
  • guacamole
  • salsa
  • cilantro
  • lime

Instructions

  • Preheat. Preheat your grill to High heat (around 450 degrees F) and place a metal grill basket over the heat to begin preheating.
  • Season the onions and peppers. Toss your onions and peppers in avocado oil to thoroughly coat. Season with 1 Tablespoon of the Fiesta Rub.
  • Season the steak. Season both sides of the beef steak with the remaining Fiesta Rub.
  • Prep the toppings. Assemble all of your fajita toppings so you are ready to eat just as the food finishes cooking.
  • Grill. Add the seasoned onions and peppers to the hot grill basket on the grill and the steak directly on the grill grates. Cook with the lid open, stirring the peppers and flipping the steak every 3-5 minutes. Grill until the steak reaches your desired internal temperature (125 degrees F for rare, 135 for medium rare, 145 for medium) and the peppers and onions until they are slightly charred and just softened.
  • Grill the tortillas. Remove the steak and vegetables from the grill. While the steak rests, place a cast iron skillet on the hot grill and grill your tortillas to heat through. Wrap the hot tortillas in foil to keep them warm.
  • Serve. Thinly slice steak against the grain. Arrange the steak and the vegetables in the hot cast iron skillet and serve to your family for a restaurant-style sizzling finish. Serve with warmed tortillas and all of your favorite fajita toppings.
