This Triple Pork Breakfast Fatty will fulfill all of your #breakfastgoals. Sharp cheddar is wrapped in scrambled eggs spiked with diced ham (pork #1). That layer is lovingly wrapped up inside of sweet pork sausage (pork #2) and the whole thing is snuggled up in a beautiful bacon blanket (pork #3). A nice dusting of my Best Sweet Rub and a little slather of BBQ sauce brings it home! This breakfast fatty hits all of the right flavor notes.

Breakfast Fatty

I believe that breakfast is the perfect meal that can be eaten any time of day. I love all breakfast foods from sausage to cereal and everything in between. Which is maybe why I went a little mad scientist with this breakfast fatty and added all of the breakfast foods.

You know when you are at a restaurant ordering breakfast and you have to choose between bacon, sausage, OR ham? The injustice! Well, I say no more! Now you can have your meats and eat them too, along with a healthy serving of eggs and cheese.

Speaking of the eggs, I cooked the eggs in a Lodge carbon steel 12 inch skillet and it made for some pretty amazing eggs. This skillet provides even heat distribution similar to their cast iron skillet, but the carbon steel is much lighter. This is my new “every day” skillet, and I can’t wait to take it camping too!

Ingredients for Triple Pork Breakfast Fatty

There’s quite a bit of goodness going into this breakfast fatty, so make sure you have everything on hand before putting it all together (exact amounts and full instructions are available in the printable recipe card below):

  1. Bacon
  2. Pork Sausage
  3. Scrambled Eggs
  4. Diced Ham
  5. Sharp Cheddar Cheese
  6. Signature Sweet Rub (you can also make your own using my recipe for Best Sweet Rub)
  7. BBQ Sauce (use your favorite or grab some pre-made goodness from Patio Provisions!)

How to Grill a Breakfast Fatty

Assembly is the tricky part on this breakfast fatty. The cooking is the easy part! Grilling your fatty over indirect heat is the trick to even cooking without major flare ups from the bacon drippings. Flare ups mean charred bacon, so definitely use two zone cooking (heat on one side of the grill and not the other) if you’re cooking these on a gas or charcoal grill.

While cooking, make sure to keep the fatty on the side of the grill with no direct heat and allow the heat from the other side of the grill to cook the fatty without any burning!

Tips for Making This Breakfast Fatty

Hold up there, friends! Before you dive into making this fatty, I have a few tips for you to make things easier than ever.

  • Use plastic wrap. Lay the bacon weave on plastic wrap, it makes it easier to roll.
  • Soft scramble the eggs. Don’t go crazy cooking your eggs fully. You want to retain some moisture and cook until they are just barely set. This will prevent them from overcooking in the fatty.
  • Use maple syrup. Swap the BBQ sauce with maple syrup if you like things sweeter (and for the ultimate breakfast flavor).
  • Get that bacon weave tight! When assembling your bacon blanket, follow the step by step picture instructions on my post for How to Make a Bacon Weave. Also, make sure your weave is nice and tight and toothpick the ends of the bacon together. The cheese inside will get melty and you want to keep it all in the fatty.

This sassy little breakfast fatty will fulfill all your #breakfastgoals. Sharp cheddar, scrambled eggs with diced ham, and pork sausage in a bacon blanket.

Ingredients
 

  • 1 pound bacon
  • 1 pound sweet pork sausage
  • 6 large eggs scrambled
  • 4 ounces diced ham
  • 4 ounces sharp cheddar cheese cut into 1/2 inch sticks
  • 1 Tablespoon Signature Sweet Rub
  • BBQ Sauce as desired

Instructions
 

  • Preheat your grill for indirect cooking to 375 degrees F.
  • Make a bacon weave on a piece of plastic wrap. Top with the pork sausage and spread out into an even layer with your fingers.
  • Spoon the scrambled eggs into the center of the sausage and nestle the cheese sticks directly down the center.
  • Gently lift up one end of the plastic wrap and begin rolling your fatty. Once the roll is completed, remove the plastic wrap and secure the ends of the bacon together with toothpicks.
  • Season liberally with my Signature Sweet Rub (this can be purchased online or you can make it from scratch using the recipe in the notes below), and place it on the grill over indirect heat. Cook for 40 minutes or until the internal temperature is about 160 degrees F.
  • Baste with your favorite BBQ sauce and cook for an additional 5 minutes until the sauce is set and the internal temperature reached 165 degrees F.
  • Remove from the grill and allow to rest for 4-5 minutes before slicing and serving! Serve alongside hashbrowns and pancakes for a complete breakfast.

    I’ve made a lot of fatties but had never made a breakfast one until now. Awesome. I have learned that the thick cut bacon doesn’t work so swell. Next time I may use pepper jack. And a quick hint, don’t probe a hot fatty. It will hemorrhage out all of the cheese!
