Bacon Wrapped Maple Glazed Carrots were born to be the star of your holiday table this year.
There is truly nothing in the world that isn’t better with a little bacon wrap (especially when that bacon is homemade!) Now, I’ve wrapped a lot of things in bacon… Brussels sprouts, asparagus, jalapenos, more jalapenos, meatloaf, hot dogs, fatties, chicken, meatballs, and tomatoes. I even put it in my caramels, apple crisps, and on my brownies. So, I guess you could say I’m a bacon connoisseur. Which hopefully gives me a little credibility when I tell you that you HAVE to try these carrots. Please.
The crisp bacon on the outside gets caramelized right at the end with this sticky sweet maple glaze and the carrots on the inside are absolutely the pinnacle of tender perfection. Aside from tasting amazing, these things are beyond simple with only 3 real ingredients and so so easy to prep in advance of your big holiday dinner. I like to wrap all of the carrots in bacon either the night before or earlier in the day then cover and refrigerate. After I finish cooking my big turkey and pull it off the grill to rest for 30 minutes, I turn up the temperature a bit and get these carrots on the grill. They will be ready to plate up and serve right as the turkey is ready to carve.
