To me, Bacon Wrapped Asparagus just screams SPRING and a real start to my favorite season: Grilling Season! Asparagus is the best in the spring when the shoots are especially tender, sweet, and super affordable. It is the perfect side dish with any meal and if you’ve already got your grill hot from cooking dinner, then you can throw these on the grill to cook while your meat is resting. With the mild, woodsy flavor of the asparagus and the salty, rich bacon not much else is needed by way of seasoning. I typically only coat the shoots with olive oil, salt and pepper before wrapping in thinly sliced bacon.
The thin bacon really is a key element here. If the bacon is too thick or overlaps a ton when you wrap it you’ll end up with burned, overcooked asparagus and rubbery bacon. You want thin bacon that crisps up quickly so you don’t kill off your asparagus by leaving them on the grill too long. Another bonus, the inexpensive bacon is typically thinly sliced so score one for my peeps on a budget! Crisp bacon, tender asparagus. Got it?
Honestly, this love affair between bacon and all things edible is just the best ever. Trust me and embrace it.
